Bacon Wrapped Paleo Friendly Meatloaf Ingredients: 1 lbs. ground beef lb. ground pork (I use Italian flovored)... 1 egg 2 Tbsp. Paleo Mustard (recipe below) 1 Tbsp. coconut 1/2 cup kale, chopped 1 carrot, finely chopped 5 green onions, greens only, finely chopped 1/2 cup spinach, chopped cup beef broth 1 lb. of bacon Directions: Mix the first 4 ingredients in a large bowl. Set aside. In a sauté pan heat oil and sauté carrot and onions for 2 minutes then add kale and spinach cook for about 3 minutes. Pour in beef broth and bring to a boil. Lower heat and cook uncovered until liquid is absorbed. Remove from heat and cool. Add to the meat mixture and blend. Refrigerate for at least 4 hours or overnight. On a piece of plastic wrap or press and seal; place bacon vertical side by side (approx. 12 inches) Form meat into a loaf shape and place on the bacon. Roll the bacon around the meatloaf using the plastic wrap to help mold the meatloaf. Cook in preheated oven 350 degrees for approximately 1 hours. Temperature reading will be 170 degrees when done cooking. For crispier bacon broil for the last 5 or so minutes. This is a good recipe to make more than 1 meatloaf, freeze, uncooked...then defrost and cook for an easy meal. Paleo Mustard- ground mustard, water, honey. Mix to your liking. I use more honey because its spicy. Experiment with it.

Side dish mashed potatoes and turnips... no dairy but you'd never know. Here is the recipe for the Super Simple Frittata I promised to post 2 weeks ago: Super Simple Frittata -Adapted from Muscle and Strength, LLC- 9-10 Servings... 1lb. Ground Turkey Sausage 2 bags Frozen Chopped Broccoli 15 Egg Whites Preheat oven to 350. Brown turkey in a skillet. While the turkey is cooking defrost the broccoli in the microwave. Mix broccoli and sausage together and season to your taste. Pour turkey and broccoli mixture into a 9x11 baking dished coated with cooking spray. Pour whisked egg whites over turkey and broccoli mixture. Bake for 35-40 minutes until eggs are firm. Calories 190 Protein 25.5g Carbs 8g Fat 7g You can add any vegetables you would like to. I added onions, mushrooms and spinach. I topped it with cup of shredded Mexican blend cheese when the dish was finished and let it melt. (add 100 calories for the cheese divided by 9= 11 calories per serving)
