#AD Do you love a quick and easy breakfast? Then, you are going to have to try my yogurt breakfast bowl. It comes together so fast - Simply layer a few ingredients (yogurt, fruit, cereal) into a bowl or a jar (if you are on the go) and enjoy with a spoon. The combination of luscious and creamy yogurt with sweet fruit and Fiber OneTM Original cereal makes it a lethal combo of flavor, texture and nutrition. Typically, yogurt bowls are often topped with granola for the crunch ...but when you replace that like I did with Fiber OneTM Original cereal, it provides a one two punch of high fiber and crunch. In my two decades as a Dietitian one of the biggest joys is to see my clients enjoy their fave foods while meeting their unique health and wellness goals. When my client M came to me 5 weeks ago, her A1C was 7.6%, she was trying to do a juice/detox type diet to lose weight and improve her blood sugar. I mushrooms as they are nutritious & delicious! Mushrooms are low in calories, fat free, cholesterol free and more importantly provide key nutrients such as vitamin D, B vitamins, antioxidants & potassium. While I enjoy all types of mushrooms, in today’s recipe I am featuring one of my faves - Portabella Mushrooms! These are large mushrooms related to crimini mushrooms. Each portabella has a rounded flat cap connected to a thick stem. Underneath the cap you will find da...rk brown fleshy gills. One whole piece or cap provides19 calories and 2g protein. They are an excellent source of selenium, niacin, a good source of pantothenic acid. Cooked portabella mushrooms have a chewy texture and an earthy flavor. Featured Recipe: Portabella Mushrooms with a Spicy & Tangy Green Chutney A delicious mushroom dish that takes its unique flavor profile from an Indian inspired spicy chutney. This flavorful dish can be served in a variety of ways as a side dish or entree. It is a perfect dish for anyone who is plantbased, vegetarianor an omnivore :-) Makes 4 servings and total prep+cook time is 20-30 minutes 1 T olive oil 4 Portabella Mushroom caps (cleaned and with gills) Few drops Liquid Aminos Green Chutney 2 cups chopped cilantro 1-2 jalapenos, roughly chopped and deseeded (if you prefer less spicy) Juice of 1 lime 1 tsp minced garlic tsp ground cumin 1 tsp ground cardamom cup water - tsp salt Optional cup chopped walnut pieces 1. Blend all the green chutney ingredients in a powerful blender and set aside 2. Heat a skillet on medium-high heat with olive oil 3. Add 4 portabella mushroom caps and sprinkle 1-2 drops of liquid aminos on them 4. Cook for 5 minutes and flip the caps 5. What would you do when you start feeling so good and are able to finally fall asleep easily without worry? Today, I’m celebrating a client of mine for the wonderful progress he has made. Like many of my clients he reached out to me because he was diagnosed with a new chronic disease at his last medical checkup. He was scared, not sure what to eat, feeling tired all the time and not really motivated to stay active. I mushrooms as they are nutritious & delicious! Mushrooms are low in calories, fat free, cholesterol free and more importantly provide key nutrients such as vitamin D, B vitamins, antioxidants & potassium. While I enjoy all types of mushrooms, in today’s recipe I am featuring one of my faves - Portabella Mushrooms! These are large mushrooms related to crimini mushrooms. Each portabella has a rounded flat cap connected to a thick stem. Underneath the cap you will find da...rk brown fleshy gills. One whole piece or cap provides19 calories and 2g protein. They are an excellent source of selenium, niacin, a good source of pantothenic acid. Cooked portabella mushrooms have a chewy texture and an earthy flavor. Featured Recipe: Portabella Mushrooms with a Spicy & Tangy Green Chutney A delicious mushroom dish that takes its unique flavor profile from an Indian inspired spicy chutney. This flavorful dish can be served in a variety of ways as a side dish or entree. It is a perfect dish for anyone who is plantbased, vegetarianor an omnivore :-) Makes 4 servings and total prep+cook time is 20-30 minutes 1 T olive oil 4 Portabella Mushroom caps (cleaned and with gills) Few drops Liquid Aminos Green Chutney 2 cups chopped cilantro 1-2 jalapenos, roughly chopped and deseeded (if you prefer less spicy) Juice of 1 lime 1 tsp minced garlic tsp ground cumin 1 tsp ground cardamom cup water - tsp salt Optional cup chopped walnut pieces 1. Blend all the green chutney ingredients in a powerful blender and set aside 2. Heat a skillet on medium-high heat with olive oil 3. Add 4 portabella mushroom caps and sprinkle 1-2 drops of liquid aminos on them 4. Cook for 5 minutes and flip the caps 5. Have you ever tried a chia pudding? It is super easy and a perfect grab&go option for breakfast or snack. Key health benefits per serving of chia seeds (2 Tablespoons) omega 3 fats - 5g of plant based omega 3 fats that are good for both heart health and brain health... fiber - 10g of a much needed nutrient. Fiber helps us stay regular, feel full, improve blood sugars and cholesterol levels protein - 6g of plant protein calcium - 130mg of calcium Here’s My easy chia pudding recipe Ideally you want to use a 1:3 ratio of chia seeds to liquid You will need 2 T chia seeds 6 oz Milk or dairy alternative Mason jar or bowl Fruit and nuts for topping A touch of vanilla or a spice that you like Directions In a mason jar or bowl Stir 2 T chia with 3/4 cup of almond milk (you could use any milk that you like) and a pinch of crushed cardamom Cover and refrigerate overnight Next morning, top with a serving of your favorite fruit and nuts I used and almond slivers This is a delicious and creamy vegan treat for a hot summer morning. This recipe also works as a cool dessert. No more excuses about running out of time to prepare breakfast. Thankful Tuesday . . Today was my 1st full day of clients in my physical office after 2 months due to Covid19. While I love helping my clients virtually and in-person, it felt great to be able to support those who wanted to meet face-to-face in the office .... . . Curious about Ivy gourd (Indian name Tindora)? It’s a small, stubby green vegetable that grows on vines and used in a variety of ways in Indian cuisine. It’s rich in beta carotene. It works well in stews, curries, pickles and in stir fry. You can find this at your local Indian grocery store in fresh and frozen forms. For tonight’s dinner I used frozen ones. . . Happy Tuesday! What’s everyone having for dinner? Tonight’s menu at our is a simple one bowl Asian style meal My inspiration was the bagged mixed greens and cabbage slaw in the refrigerator that were on its last legs, used precooked frozen rice as well as baked and cubed tofu that I had sitting in the fridge. For crunch, I used roasted cashews, and pumpkin seeds since I had those in my pantry .... . Ingredients .1 T oil .4 minced cloves .1 Chopped bell pepper .1 chopped jalapeño .4 Cups shredded kale .2 Cups cabbage slaw . Liquid aminos . Seasoned rice vinegar . Frozen, precooked brown .1 block extra firm tofu drained, cubed & baked . Chili garlic sauce (optional) to drizzle .Salt & Pepper to taste . Cashews + chopped green onions+chopped cilantro + pumpkin seeds for crunch and garnish .
