Who's HUNGRY!?!! Maggie here! I'm sharing with you my go-to macro bowl recipe! Macro bowls are a great way to make sure you get all your plant-based macronutrients (protein, carbohydrates, healthy fats) in your meal!... It's typically composed of a grain base, raw or cooked veggies, a protein of your choice, and healthy fats. You can mix it up and get creative with your macro bowl. Our family likes to try different combos everytime!... Ingredients [Anything works, but here’s what we used for this one] - Bananas - Cantaloupe - Strawberries - Pineapple - Mango - Peaches - Apples - Blueberries - Coconut milk [can substitute w/coconut water] Blend together! Can you believe it? December is nearly over! But, there's still time to catch some holiday lights before the season comes to an end. To make it easy for you, we've put together a short itinerary through the city with hot chocolate at the last stop! Hop into the car to 45 Upper Terrace in Corona Heights. A classic, this house has been famous in the neighborhood for its seasonal décor. No detail is spared, from giant & ornaments that line the walk way to upstanding n...utcracker dolls and Christmas music playing softly in the yard. Next, drive 3 minutes to 68 Castro Street near Duboce Park, another quintessential Christmas home in San Francisco. From there, drive 6 minutes to the Tom and Jerry House at 3650 21st Street, one of the most famous holiday houses in SF for the last 30 years with humongous ornaments and a 65-foot tree in front of a Noe Valley Victorian. Lastly, drive over to Ghiradelli Square to take in the iconic 19 foot-tall, 152-food-wide 'Ghiradelli Square' sign that recently returned to the square with newly installed LED lighting. Holiday snack time! Get festive with this sweet treat and enjoy! Ingredients: - Butter - Granulated Sugar... - Corn Chex Mix - Vanilla Extract - Powdered Sugar - White Chocolate Baking Chips - Holiday Sprinkles Instructions: 1) Melt cup butter for 30 seconds in microwave 2) Stir in cup granulated sugar & microwave again for 30 seconds 3) Once sugar is dissolved, add in 2 teaspoons of vanilla extract 4) In a large bowl, pour 6 cups of chex cereal 5) Pour butter-sugar mixture over cereal & stir to evenly coat 6) Microwave for 3 minutes, stirring after every minute 7) Add cup powdered sugar & mix 8) Spread mixture onto a wax paper-lined cookie sheet 9) In a separate bowl, microwave 1 cups of baking chocolate chips for 1-2 minutes until smooth 10) Place the melted chips into a plastic bag & cut off a small corner of the bag. Maggie here , Happy Friday! I’m excited to share w/u my go-to vegan dish - TOFU LETTUCE WRAPS! It’s is packed w/protein & veggies!! You can serve it w/a side of rice or eat it as is.... So, LETTUCE COOK! Ingredients: - 1 block extra firm tofu, pressed, drained and cubed - 8 oz. can water chestnuts, drained, rinsed and chopped - 1/2 medium zucchini, chopped - 1 cup mushrooms, chopped - 1 medium carrot, chopped - 3 cloves garlic, minced - 1 head butter lettuce or iceberg lettuce Sauce: - 3 tbsp hoisin sauce - 2 tbsp rice vinegar, unseasoned - 2 tbsp soy sauce - 1 tsp sesame oil - 1 tsp sesame seeds - 1 tsp red pepper flakes (optional) Instructions: 1. In a large saucepan over medium heat add a little bit of water or cooking oil and the garlic. Saute garlic for 3-4 mins or until fragrant. 2. Next add the zucchini, mushrooms, carrots, water chestnuts and tofu. Let this cook while we make the sauce. 3. To make the sauce add all of your sauce ingredients into a bowl and whisk together. Once it is smooth pour over veggies in the saucepan and let cook for 10 mins stirring frequently (we want the majority of the sauce to be soaked up by the tofu and veggies). 4. Once its done divy it into your lettuce wraps. I like to add rice (optional) to this meal to make it more filling. To make this meal gluten-free substitute soy sauce w/gf tamari. Brrrr... what’s better than drinking hot chocolate by the fireplace?! These holiday hot cocoa bombs are sure to bring some joy ! Ingredients: - White Chocolate - Hot Cocoa Mix... - Extra Marshmallows (optional) - Silicone Baking Mold or Sphere Ice Cube Tray - Other Decorations (Optional) - Warmed Milk or Water Directions: 1) Melt your chocolate either in a microwave or double boiler 2) Evenly coat each half sphere mold 3) Place the mold in the freezer for 15 minutes 4) Carefully remove each mold from the tray 5) Scoop hot chocolate mix into half of the molds 6) Heat an empty plate in the microwave (~ 30 secs - just enough to warm it) 7) Take the empty molds and melt the edges on the warm plate, just enough to help glue it together 8) Decorate (optional) 9) Warm milk or water in a mug 10) Drop the hot cocoa bomb and enjoy! Maggie here! Happy Friday! Join me here on Fridays (Dec. & Jan.) as I share some of my favorite, super easy, simple, & DELICIOUS vegan/veggie recipes!! Today, we’ll be making my scrumptious Vegan Banana Oatmeal Pancakes ... Ingredients: - 1.5 cups rolled oats - 2 bananas (very ripe and spotty are best) - 1/4 tsp salt - 1 tsp vanilla extract - 2 tsp baking powder - cup plant based milk Directions: 1. Heat up a non-stick skillet to medium heat so it can warm up while we make the pancake mix 2. Add all ingredients into a blender and blend on high for 30 seconds or until very smooth (no chunks). Tip - add in your water and bananas first to help it blend better. 3. Pour about 1/4 cup of the batter onto your hot skillet. Let it sit for 3-4 minutes on the first side. Best to make one pancake at a time. 4. Flip the pancake and cook on the other side for 3-4 more minutes (depends on how brown you want them). 5. It’s the start of the Winter Season! For me, CJ, that usually means I’m cranking out cookies, bars, and pies for friends and family. Here’s a cookie recipe to brighten your day with a sweet wintery, treat: Snowballs (aka Mexican Wedding Cookies, aka Russian Tea Cakes)! Ingredients: - 1 Cup Unsalted Butter - 1 3/4 Cups All Purpose Flour... - Cup Powdered Sugar (Confectioner’s Sugar) - Teaspoon of Salt - 2 Teaspoons Vanilla Extract - 1 Cup Pecans, chopped (or nut of your choice) - Cup Powdered Sugar, for coating (keep aside) Steps: 1) In a bowl, cream together the sugar and slightly softened butter, that’s been cut into large pieces (you can use a hand mixer or good ‘ole elbow grease). Stir in vanilla. Mix in the flour and chopped pecans (or your nut of choice). Keep mixing until it comes together into a smooth dough, it shouldn’t be sandy! 2) Preheat the oven to 350 degrees. 3) Shape the dough into small balls, resembling snowballs, and place on a cookie sheet. Bake for 13-14 minutes. Allow to cool on the pan, 5-8 minutes; once cool enough to handle but still warm, roll the baked cookies in powdered sugar. Once coated, let fully cool on a wire rack and then roll in powdered sugar again. 4) Enjoy with a cup of coffee or tea! Tips: If you want to be extra festive, try adding some crushed candy-canes, almond extract, or even rum extract for a little extra wintery kick!
