Take if from someone who lives in the avocado capital of the world!! Before you toss those (very expensive) avocados, try freezing them. Slice your ripe avocado and toss the pit. Remove the skin and put the helves into a Ziplock bag, and sprinkle in some lemon juice. Squeeze the air out of your Ziplock bag before closing. Seal it well and store it in the freezer. They will never be perfectly sliceable again but use in baking, smoothies, chimichangas and guacamole - yum!
