Recent trip to Seattle Washington , we had a rare clear day , just had to take in Mount Rainier

Panchitta [ Italian Bacon] just out of the cure/salts & pepper, now hang for a few days then roll it up/tie or age flat. Thinking about all the ways I'll be using this .

Prosciutto: Started with 1.175 kg Pork Tri Tip , packed in salt for 3.5 days weight after salting 1.012 kg , now it has to cure for 3 months. Will be finished the end of March 2019.

Our creek crossing being cleared 1/11/18 , that skip loader just dropped a bolder the size of a Smart Car that was in the road way Notice the mud to the left of the rear tire looks like its 2 1/2 ft deep Once he gets this section cleared , I understand the road is clear up to the nursery

Looks like we will be blocked from returning to our nursery for quite a while, here is where we used to cross Toro Canyon Creek as you can see the damage is extensive
