The famous (and expensive) white truffle is called Tuber Magnatum Pico. These are famous white truffles from Alba, Piemonte. Truffle season starts mid October and runs through December in the region of Piemonte. Tuber Magnatum Pico is covertly sourced during the night in secret locations by truffle hunterswho take their dogs in Italy (pigs are used in France)and without the use of a flashlight so their area is not discovered. There are black truffles found in Emilia Romagna..., Umbria and Toscana, as well (though in Umbria white truffles can occasionally be found). Truffles are classically served over taglioni (tarajin) and over eggs in Piemonte. The Langhe in the fall is absolutely dreamy, during the fall harvest of Nebbiolo grapes. Italy never ceases to amaze and inspire! Archaeologists near Verona recently discovered this preserved mosaic floor from a villa dating back to the 3rd century AD. The location is in Valpolicella...and was found in the middle of a modern day wine vineyard!
