Although Earth Day is a time where one can appreciate what the world has to offer, it is also a reminder for everyone that we must take care of it so that we can continue to admire our planet and its splendor. So, please do what you can to make a positive impact on the planet every day. When the Sun Rises at The Sun Vegan: This is a behind-the-scenes look at how we prep one of our customer's favorite appetizers, the Spring Rolls (Gi Cun). Before the opening hours, the chef (or the Daddy Boss) and his assistant, who is remarkably diligent and hard-working, slice up the vegan chicken strips and oyster mushrooms into thin slices. In the meantime, they're also frying up tofu using soybean oil until they are at its crispiest. When those are done, they slice up... the fried tofu and start the cooking. 1) They stir-fry the chicken with rice bran oil until it has that crispy burn (he says you must mix it often while cooking), and then he turns the heat low to add in the liquid aminos. After he stirs a little bit more with added heat, but not too long so it won't get burnt. Finally, he adds fresh scallions that he grows himself out in our little garden and mushroom powder! He also grows mint leaves. 2) Next, he cooks his smoky fried tofu. He slices the fried tofu blocks into strips before he puts it in the wok. He adds a little bit more of rice bran oil and liquid aminos to stir-fry everything until the tofu has its burnt smoky flavor. Yup. He adds no liquid smoke. He MAKES his own smoky flavor. I don't know how he does his magic, but he just does. His assistant does the same thing and she can't even get it to be like his. We don't know why and we don't know how. Haha. 3) He, then, stir-fries the mushrooms with rice bran oil, liquid aminos, mushroom powder, and scallions. 4) Now, this is where the assistant does her own magic. She makes the spring rolls by putting in a whole lettuce leaf (organic, of course). Then, she adds in other various and colorful vegetables in (carrot, green and purple cabbage, cucumber, more shredded lettuce, sliced spinach, and fresh julienned mangos) that's mixed with the housemade vinaigrette dressing that we use in our Heavenly Salad. After, she adds in the Vermicelli noodles and the chef's chicken, mushrooms, and smoky fried tofu. Well, have I got some sweet news to tell you all. We got some new dessert items at The Sun Vegan, baby! Along with our main classics (Thai Banana Rolls, Lemon Poppy Seed Cheesecake, and Tiramisu), we also got more cakes and a whole lotta ice cream (8 delicious flavors to be exact). We'll be selling the newer items until they are gone AND THAT'S IT. So, you get what I'm saying here, friends? It ain't that hard cuz it's totally a piece of cake...or two...or three. If not, then ...come on over and try our new desserts! We can all scream for ice cream (and how awesome they and the cakes taste). And yes. We still got a lot.
