The Speakeasy Bakery 27.12.2020

Sourdough bread made a HUGE comeback during the early months of the pandemic. Here at the bakery, we saw a 20% increase in members and were handing out tips right & left. But for THIS baker, for unknown reasons, it had the opposite effect. The Bakery’s #WorldFamous starter languished in the fridge for FIVE MONTHS!!! FIVE!!!!!!! Well, the sourdough winter is over. The starter was restarted, the float test was passed, and, just to get things rolling, we started with a couple... of loaves of Country White No-Knead sourdough bread. Can’t wait for the weekend!

My daughter, a fervent supporter of our charity, feedSCV, is the Global Director of Fabric & Trim at Champion Sportswear/Hanesbrands, Inc. in New York City. They’ve been doing team building Zoom sessions every Friday. Yoga, various crafts etc. She asked me to do one on bread, so I did No-Knead and Baguettes. I did it old-school which, for me, means no scoring and dumping directly into the Dutch oven, rather than a sling or use of a pizza stone and stainless steel bowl.... Not bad .. and the Zoom seemed to go really well. I had to prep various stages for demo, similar to my regular classes. But no one to grab dirty dishes and clean so afterwards, the kitchen look like a bomb hit. Madeline says, Hi!

Whole Wheat Weekend I haven’t made any whole wheat bread in a long time, so working at home this tax season will give me the opportunity to hone those skills again. The house was definitely a bit cool yesterday, which, even though I realized it, I didn’t alter my program much, which lead to a slightly less than spectacular rise. The loaf in the foreground is a 100% Grist & Toll Hard White, with 82% hydration.... The other two were a mixture of G&T Hard White, KA bread flour, and Bob’s Red Mill rye, with 74% hydration. Multi-grains: Millet, poppyseeds, sesame seeds, pumpkin seeds, flax seeds, sunflower seeds, and cornmeal. Trying some more complex scoring patterns on the multigrain .. I’d give myself a score of Average. Practice practice!
