I was in a TRY IT TUESDAY kind of mood! So, for lunch today, I made a dish I've never had!! Thai Red Curry was so yummy!! I can tell that the leftovers will be even better once the flavors have time to really meld. I made this according to the package directions. In the future, I'll definitely add some red pepper flakes for more spice since you all know I love SPICY! This recipe calls for 1 pound of diced chicken, a can of lite coconut milk, 3 cups of mixed veggies (I used... a mixture of broccoli, cauliflower, yellow squash, red bell peppers and red onions), juice of a lime and 1 tsp of soy sauce. Dinner tonight was AMAZING and took less than 20 minutes!! Ground turkey stir-fry served over rice and drizzled with warm sesame ginger dressing. My hubby loved it!! ... The ingredient prep took 5 minutes. The cook time was 4 minutes and 45 seconds in the Multipurpose Steamer in the microwave! Another 5 minutes to make the dressing, plate and serve!!
