These pork ribs were marinated over night with our house made Prik Gaeng Tai then slow roasted in the oven for 3 hrs. We coated the ribs with our dry curry sauce, makrut lime leaves and green peppercorns. Gaeng Som Chone (Southern Thai sour curry with elephant ear stems/ Bac Ha), one of my favorite simple dishes, I usually get when I go to south of Thailand. We usually use sea bass, snapper or shrimp in southern sour curry.
