Another exciting natural process offering from Minas Gerais, Brazil. Great for dark roast fans, but versatile enough to be roasted to any level and shine, with notes of caramel, dark chocolate and a citrusy brightness.

Congo Twende co-op in the trier paddle, this time at 410 degrees fahrenheit internal temperature. This is around the middle of 1st crack, an audible exothermic expansion. The coffee is nearing what roasters call a "City" style roast. Pretty high to medium acidity, strong aroma, and a somewhat thin body. Great for espresso and French press.
