Distillation is where the dead mosto (fermented agave juice at about 6% alcohol) becomes ordinario during the first pass. After two distillations, and after cutting some high/low alcohols, it can then be called tequila. Most brands distill twice, but there are a few brands that distill more than two times. This photograph was taken at the Cofradia distillery where steel stills are used.
