"Confidence is built in the moment you say '$!@& it'! It's built in the moment that you say that you are done playing small and showing up in a way you feel like you are "supposed" to. It's built in the times that you put in the work even when you don't want to. I have a whole slew of pictures I could have posted this morning. Pictures with better lighting, more natural poses and more what you would probably expect. ... Instead I chose this pretzel pose I chose it bc THIS is the exact moment that it hit me just how small I've been playing with my life. It's the moment that left me speechless! 21 days ago I made a decision that this month would be different. That I would tear the face off the #75hardchallenge and I would dive into the thing that fuels me no matter how many people don't get it. 21 days ago I said, "I'm gonna do what I love," and I jumped. I literally cannot even put into words what has shifted inside of me. The CONFIDENCE I feel and the pride I have for that decision! Please hear me on this. Give thanks to your leftovers with this easy Loaded Turkey Meatballs recipe! Ingredients 1 lb ground turkey 1 carrot, peeled and grated... 1 zucchini, grated 1 small brown onion, finely diced 2 tsp minced garlic 1 egg, lightly whisked 1 tbs coconut aminos* 2 tsp dried parsley 2 tbs almond meal pinch salt & pepper 4 tbs olive oil Directions Sauté onion with 1 tablespoon of olive oil in fry pan for 5-6 minutes until it softens. Add garlic and sauté for further 2 minutes. Set aside to cool. In large mixing bowl add ground turkey, grated carrot and zucchini, egg, coconut aminos, dried parsley, almond meal, salt, pepper and cooled onion mixture and mix well until thoroughly combined. Divide mixture into 9 meatballs. Reheat fry pan and add 3 tablespoons of olive oil. Cook meatballs turning every 3-4 minutes until cooked through.
