The lentil sauce called "dal," or "pappu," is a rich lentil sauce often eaten with rice. This sauce is served all over India, with many different variations. One of the most popular is dal makhani. This dal is made with red kidney beans and whole black lentils.
Throughout its long history, India has been invaded and occupied by multiple cultures and each has left its mark on Indian cuisine. Predominant influences still felt today include Aryan, Persian, British, and Portuguese.
Ginger, a spice that's typically used in Indian cooking, has many health benefits. It has been used for many centuries as a digestive aid, and may help with inflammation, too. A study conducted by the University of Miami found that participants had a 40 percent reduction in osteoarthritis pain from consuming ginger.
Garam masala, also known as "curry powder," is an essential spice used in Indian cuisine. This spice combination typically includes coriander seeds, cumin seeds, cardamoms (green and black), cloves, peppercorns, cinnamon, bay leaves, chili pepper, and nutmeg.
Although Indian food is chiefly influenced by Hindu beliefs and culture, it has evolved to incorporate dishes and cooking styles from Persia and Great Britain. In turn, Indian cuisine has spread its influence throughout Southeast Asia and the Caribbean.
While Indian food has become beloved for its rich blend of flavors and textures, the earliest Indians (the Harappans) most likely ate much more simply. It’s believed that central ingredients in their cuisine included wheat, rick, chickpeas, and lentils, as well as the occasional meat (such as sheep and goats).
Did you know that, according to Indian food theory, there are six different tastes: sweet, sour, salty, spicy, bitter, and astringent? An average Indian meal is a well-balanced combination of all the six tastes.
Many Indian restaurants have choices on the menu that are a complete meal all in one dish. Biryanis, for example, are made by cooking vegetables and meat, like chicken or fish, together in a sauce that may be very spicy or medium. The meat and veggies are then layered with rice and then slow-cooked to draw out the juices.
While Indian cuisine is varied, many dishes are cooked in a similar way. First onion, ginger, garlic, and spices are fried in oil at a high temperature. Then, meats, vegetables, yogurts, and spices like turmeric are added and left to simmer at low heat.
Although today we think of ingredients like potatoes, chillies, and tomatoes as essential parts of many Indian dishes, they didn't start out that way. All of these ingredients were incorporated into Indian cuisine by the Portuguese, who colonized parts of India in the early 16th century.
North Indian cuisine focuses on delicious bread, like naan and paratha, while south Indian food tends to favor dishes built around rice. If you prefer one over the other, you're in luck, because most Indian restaurants offer both options.
