Let's talk about pork, guanciale to be specific. We used this cured pork in the All' Amatriciana recipe that was posted last week. Guanciale has a unique flavor, one much different from pancetta. This cut is sourced from the jowl rather than the belly and has a much higher fat content, which tends to melt when cooking. And we all know: fat is flavor. Guanciale is also the classic meat for Pasta Carbonara. Try the locally made version from Alle-Pia Fine Cured Meats today and taste the difference.

Who's ready for spaghetti & meatball weather . @xninjason Check out our recipe for easy, weeknight meatballs Ingredients... 1lb ground pork 1lb ground beef 2 tbsp garlic powder 2 tsp onion powder 1 tsp chili flake 2 tsp salt 3/4 tsp cracked black pepper 1 tsp colatura di alici or Red Boat fish sauce 1/4 chopped parsley 2/3 cup pecorino 1 egg 1/2 cup fine breadcrumbs --- Directions Heat oven to 375 degrees. Line the bottom of a broiler sheet with foil, and spray or wipe the surface with vegetable oil. Mix all ingredients together by hand and roll into 1 inch balls. Place on broiler sheet and bake 30 minutes, or until cooked through and the meatballs have a nice crust on them. (You can also pan fry these in a cast iron pan, if you prefer.) Finish the meatballs by warming them with your favorite sauce.
