Whole30 recipe I made for dad and I last night. I’m not much of a cook. My kitchen is tiny with minimal counter space. So I prefer to cook with 6 ingredients or less. So this was beyond my usual effort threshold but I’m trying Whole30 for cooking inspiration that’s healthy. This is a family friendly hearty dish and it was pretty dang good . Sweet Italian sausage, fresh minced garlic, kale, carrots, yellow onion, paleo friendly pesto, marinara sauce, whipped eggs, comes out... like a casserole. Next time I’ll add even more kale to it! I give it 4 out of 5 just because of all the chopping, prepping and dish washing But it was a great reminder of the importance of having fresh veggies chopped and ready to go in your fridge at all times. I was able to see clients for 10 days before being shut down again. New candles for the treatment space were gently flickering, air purifier running, aprons, masks, sanitizer, all in place. It felt great to work and know I was providing a valuable service. And now- I am opening myself to transition my offerings so they are available even during a shutdown. Change has never been my strong suit. Or technology for that matter. But I’m open. I’m listening.
