Photo credit @crafty_morning. Materials Needed: Red, orange, yellow, green, blue, purple, white and black paper... Scissors Tape Pennies or glitter Directions: Start by cutting long strips of paper. Lay them in order of the rainbow colors and tape them at the bottom slanted. Cut out a pot of gold with black paper and glue it to the end of the strips.Take two paper strips at a time, make a loop, and tape it to the paper.Once all the rainbow strips are done, roll pieces of tape and attach a fluffy white cloud at the end of the rainbow! A healthy Valentine’s Day theme snack from @amyshealthybaking For the muffins 6 tbsp dried cranberries c. water 1 c. flour tsp baking powder 1/8 tsp baking soda tsp salt c. fat-free cream cheese, softened 2 tbsp tub-style margarine c. sugar 2 egg whites 1 tsp vanilla extract c. skim milk. For the icing 4-6 tbsp powdered sugar tsp water ? tsp vanilla extract 2 drops red food coloring 1. Preheat the oven to 350, and line 12 muffin cups with paper liners. Lightl...y coat the liners with nonstick cooking spray. Drop a marble in between each paper liner and the side of the muffin cup to form a heart shape. 2. To prepare the muffins, combine the cranberries and water in a small, microwave-safe bowl. Cover tightly with plastic wrap, and heat on high for 2 min. Let cool and drain any remaining liquid. 3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a large bowl, cream the cheese, margarine, and sugar. Add in the egg whites, one at a time, and the vanilla, mixing well. Alternate between adding the flour mixture and the milk, mixing just until incorporated, and beginning and ending with the flour. Gently fold in the cranberries. 4. Evenly distribute the batter between the prepared liners, and bake at 350 for 22-25 min or until a toothpick inserted into the center comes out clean. Cool in the pan for 5 min before turning out onto a wire rack to cool completely. 5. To prepare the icing, stir together 4 tablespoons of powdered sugar, water, vanilla, and food coloring in a small bowl. Add more powdered sugar as necessary to achieve the desired consistency. We found this fun recipe from @sunnydayfamily. A simple and healthy snack for you and your family to have after school. Ingredients: 5oz. bag Craisins Dried Cranberries (you can substitute another flavor if you like)... Semi-soft Cheese Rounds Thin Pretzel Sticks Craisins Fruit Clusters - Cranberry Granola (for serving on the side) Directions: On a serving dish, lay out 3 semi soft cheeses end to end. Press your Craisins gently into the cheese to make the snowman's eyes, nose, and buttons. Add more Craisins to the top in the shape of a hat, and on the bottom for the ground. Next, take 2 pretzel sticks and break them into thirds. Stick one third into each side of the center cheese round for the snowman's arms, and place the remaining pieces at the end of the two sticks to be the hands. Serve with a small bowl of Craisins Fruit Clusters Cranberry Granola for an extra punch of whole grain oats and a sweet crunch! #helathysnackforkids #sunnydayfamily #afterschool #torrance #palosverdes #snowperson #funcookingwithkids
