Made some lilikoi salt with my mom over the weekend! I wish you could smell the processit was the most delicious aroma WOW - bring about 10 lilikoi (depends on size) and 1 cup of water to a boil - strain seeds (it’s easier to strain after adding water and boiling) - add 1 cup of salt and boiled juice back into pan and boil down, stir constantly to make sure the sugar from the lilikoi doesn’t stick and burn... - fluff and spread lilikoi salt and dry in full sun for at least a couple of hours, break it up and mix it around a couple of times while drying - you can grind it depending on desired coarseness and lastly, store in a recycled jar I love using this salt in salad dressings, marinades, just about anything that calls for salt.
