Grain Free Vegan Brownies with Chocolate Hemp Butter Icing 1/2 cup Coconut Flour 1/2 cup Buckwheat Flour 2 Tbsp Tapioca Starch... 1 Tbsp Ground Chia Seed 1 Tsp Baking Soda 1 1/2 Cups Coconut Sugar 1 cup Cacao Powder 1 1/2 cups Oat Milk 2 Tbsp Red Palm Fruit Oil, Melted Coconut Oil, or Avocado Oil This is my go-to indulgence for those days you just need chocolate! This recipe is grain free (minus the oat milk if you count that but you can easily swap that for any other plant milk that fits your needs), lower glycemic (because of the coconut sugar), completely vegan and 100% satisfying! To make ground chia seed simply throw some whole black chia seeds in your Vitamix (or coffee grinder) and blend on medium to high for about 10 seconds or until they take on a fine powder consistency. I do a good amount at once so I always have it on hand. For a slightly more fudge-like and less cake-like brownie you can replace the ground chia for a ‘flax egg’ or ‘chia egg’ by mixing 1 Tbsp ground flax seed (or flax meal) or ground chia with 3 Tbsp water. The more liquid that goes into the brownie mixture, the fudgier the brownies will end up so feel free to play with the amount of liquid in the recipe for desired consistency! To make your own oat milk check out my previous video post on Homemade Oat Milk or simply use any plant milk you have on hand. Pre-heat oven to 375 degrees F. Mix all dry ingredients together and then add the oat milk and stir well. Using a greased (with a little oil of choice) glass baking dish (roughly 8x11x2) pour the batter in and bake at 375 for 30 minutes. Test with a toothpick in the center to see when it’s done. Toothpick should pull out clean. Don’t forget to lick the bowl for a sample while you wait since this batter is safe to eat raw! Let brownies cool and then ice with RAWake Chocolate Hemp Spread and enjoy with a glass of Oat Milk!
