In Ethiopia, we traditionally serve meals as shareable platters with several different dishes, rather than as individual plates. When eating with a group, everyone typically eats from the same large platter. These platters will include at least one stew, injera bread, and often some vegetable side dishes like stir-fries and salads. Stews are the first part of any platter. The most popular Ethiopian stews often have a legume base and are flavored with one of two main spices berbere or turmeric. The basic steps for cooking Ethiopian stews are to sauté some onions, garlic and either the berbere spice or turmeric with oil, and then add your chosen legume. Finally, add some water and let it simmer. Here’s a closer look at three classic plant-based stews. These same dishes are also eaten in neighboring Eritrea, though they go by different names there. Kitfo// Kitfo// Made from the leanest meat, kitfo is viewed as a big treat by ordinary Ethiopians, while its nutritional powers are also praised. Similar to French steak tartare, the meat is minced and warmed in a pan with a little butter, mitmita (a stronger version of berbere) and sometimes thyme. Kitfo is typically served leb leb (warmed, not cooked), though you can ask for it to be betam leb leb ("very warmed," which basically means cooked).... Kitfo can be served with aib (like dry cottage cheese) and gomen (minced spinach), a recommended pairing making the meal even more delicious, as well as especially filling -- highly recommended after a hard day's traveling or if one is confronted with a hangover after a long night. DEMERA AND MESKEL: ‘IMMENSE PARTICIPATION OF THE SOCIETY’ The Meskel festival traces its roots back 1,600 years, and although it hasn’t been celebrated with the same level of enthusiasm in every century, today’s Ethiopia is packed with adherents who grandly celebrate Meskel. Colorful Demera processions begin in the early evening of Meskel eve; firewood is gathered by community members, and t...he bonfire site is sprinkled with fresh yellow daisies. Bonfires burn the night through, and when the flames at last begin to smolder, leftover ash is used to mark the foreheads of the faithful, in an act similar to that of Ash Wednesday. On Meskel, the people of Ethiopia attend religious services, gather with family, and feast together. Did you know? Ethiopia is the only country in the world that celebrates the finding of the cross on a national level. Ethiopia recently petitionedand succeeded, in December of 2013in requesting UNESCO to register the Meskel events in Addis Ababa as a cultural heritage experience, for its ancient nature color and significance and the attraction it has for a growing number of tourists as well as the immense participation of the society. How does Meskel taste, sound and feel? Ethiopian honey wine, exotic spices and the spiciest of hot peppers dazzle the plates mounded with food, as family honored recipes fill the table. In community settings, dozens of women gather to prepare food for hungry churchgoers, humming and singing traditional songs while they work. Homemade cheese, tomatoes and lentils are served with injera flatbread.
