Its made in the village of Santa Catarina Minas by the Sarmiento-Vasquez family using the ancient, ancestral methods of production. Their Agave Espadin is pit roasted, rested for several days, crushed by hand with wooden mallets, wild fermented, and then distilled in clay pots. It is smokey and fruity with a pleasant weightiness on the palate. ... A few years back the Mexican government made some changes to the law regarding allowable methanol levels in Mezcal. We’re not scientists and don’t want to get too deep in the weeds. However, the producers of Minero and almost every other Mezcalero in Mexico were forced to change their processes and formulation to comply with the new law. Everything that the Sarmiento-Vasquez family produces is fantastic, but we still prefer the old formulation. So when we heard this change was coming, we bought as much Minero as we could find and held onto it. Now you, our beloved (and lucky!) customers get to benefit from our foresight! For about the same price that you’ll pay for their current production, we’re offering 4 year old bottles of the old formulation. Don’t pass up the opportunity to taste something that won’t be available ever again! @ Santa Catarina Minas

Mezcal Monday! Today we’re thinking about Pechuga! Pechuga means breast in Spanish, but to Mezcal aficionados, it’s signals a rare and unusual subcategory of their favorite spirit. Pechuga is a style of Mezcal that is made by infusing twice distilled spirit with fruit, nuts, spices, and rice prior to a third destination. Classically a raw bone in chicken breast was hung in the still during the third distillation (as seen in the second picture) though these days many other t...ypes of proteins are used as well. The fruit and spices provide sweetness and complexity, while the protein provides a savory balance. As the category has gained in popularity, the creativity of the mescaleros has increased as well with each recipe closely guarded by the Mescalero. Stay tuned for our featured Mezcal of the week, available in 4oz bottles, which will be a Pechuga. ¡Stigibeu!

We have a heavy heart this Mezcal Monday as we heard the terrible news of the passing of one of our favorite Maestro Mezcaleros, Aquilino Garcia López of @mezcalvago. Our heart goes out to his son in law and founder of Vago, Judah Cooper, his family, and the community in Candelaria Yegole. We will raise a copita in your honor tonight Aquilino. Descansa en Paz Maestro. Para todo mal Mezcal, y para todo bien, tambien.
