Hey Pacificans, and Congratulations on (almost) overcoming 2020! Enzo and Bam are extremely excited to offer our Leadership in Training (LiT) series to ALL UOP students this upcoming Spring 2021 semester! Watch our promo to learn a little bit about the series and be on the lookout for the application link on January 4th as we near the new year and new semester. Let's be honest, we don't all have the hang of Zoom just yet and that's ok! ... Consider spending some time with Enzo & Bam next semester to work on self-reflection, personal branding, and get to know a few cooky characters along the path of your own personal development!

Closing out season 2 with a popping good time! Laura and Bam are bringing the carnival to your backyard. We have four easy recipes for this episode, carnival dogs, popcorn, apple crisp foil packs, and street corn! Season 3 of Baun Backyard eats will return in February of 2021, if you have any recipes you would like to challenge us to tackle, drop them in the comment box! You might even get a shoutout for inspiring an episode. If you replicate this recipe, make sure to post t...o social media by the end of 2020 & tag us @PacificRec for a chance to win an outdoor cooking set! Recipes: Popcorn Toss popcorn kernels and vegetable oil in pie tin. Cover tightly with foil and place on campfire. Using tongs, gently shake pie tin until popping stops. Season with garlic powder and salt. Carnival Dogs Separate crescent dough. Spread a very thin layer of mustard over each piece of dough then place a hot dog on top. Roll up, so the dough is wrapped around the hot dog, then skewer each dog. Cook over a campfire until the crescent is golden and the dough is cooked through, 10 to 15 minutes. Apple Crisp Foil Packs Base layer: In a large bowl combine brown sugar, cornstarch, and cinnamon. Add apples and stir until all coated with mixture. Topping: Combine the sugar, flour, oats, cinnamon and nutmeg. Add butter and mix until crumbly. Use two pieces of foil for each packet. Divide apple mixture equally onto each foil packet. Add 1 cup of crumb topping over each packet of apples. Seal and close up packets. Place your foil packets on a grill 2 inches above the coals and cook for 12-15 minutes or until apples are cooked through and crumb topping is golden brown. Carefully open foil packets, top with ice cream or cool whip if desired and serve. Street Corn Keep the husks on. Wash and then grill the corn over the campfire until it starts to get slightly charred, turning every few minutes to avoid burning it. Mix the mayo, sour cream and cilantro. Take the corn off the fire and generously slather it in the mayo mixture. Sprinkle with lime juice, generously sprinkle with Parmesan, and then finish off with chili powder. Ingredients: Popcorn: 1/4 c. popcorn kernels 1 tbsp. vegetable oil 1/4 tsp. garlic powder kosher salt Pie Tin Aluminum Foil Carnival Dogs: 1 can crescent dough 2 tbsp. mustard 8 hot dogs* Apple Crisp Foil Packs: Base: 6 Granny Smith apples thinly sliced (you can peel or not, either way works) 1/4 cup light brown sugar packed 1/4 tsp ground cinnamon Topping: 2 cups firmly packed brown sugar 2 cups flour 1-1/2 cup quick oats 1/4 tsp cinnamon 1/8 tsp nutmeg 1 cup butter melted* Street Corn: 6 Ears of Corn 3/4 cup Mayo* 2 cups Sour Cream 1/2 cup Cilantro finely chopped 1 cup Parmesan cheese 2 fresh Limes juiced Chili Powder to taste *Vegan/Non-Dairy Alternative used in the video

Today’s Hike of the Week comes from our Marketing Lead, Gabby! Muir Woods is part of the Golden Gate National Recreation which lies in Gabby’s home of Marin County. It is home to some of the largest old growth redwood trees and is famous for many reasons including its movie features in Star Wars, Jurassic Park, and Planet of the Apes. History: Theodore Rosevelt created this monument in 1908 by using the powers of the Antiquities Act and named it after conservationist, John... Muir. In 1945 Muir Woods was used as a meeting area for over 500 United Nations delegates after the first ever peace conference in San Francisco. World War II was not yet over, and Save the Redwoods League proposed to use Muir Woods as a symbol of peace within the world. Hike: Plan your trip! To visit Muir Woods, you will have to make a reservation (which you can do at nps.gov) to park at the monument. This is important because there is no parking other than this and you will be fined for parking along the main road! Pick a hike! There are numerous hikes in Muir Woods so make sure you have a map or a trail guide on your phone (alltrails and trailforks are great). There are longer, more strenuous hikes and shorter hikes for any skill level!
