Saturday Slimdown Great for On-the-Go! Spicy Almond-Pumpkinseed Snack Mix What You Need:... - 2 cups gluten-free crispy rice cereal squares (such as Rice Chex) - 1/2 cup salted roasted whole pumpkinseeds - 1/3 cup slivered almonds - 1 tbsp canola oil - 2 tsp chili powder - 2 tsp Worcestershire sauce {Check for Gluten} - 2 tsp prepared mustard - 1/2 tsp Spanish smoked paprika - 1/4 tsp ground cumin - 1/4 tsp ground red pepper - 1/4 tsp salt - Cooking spray Get Cookin: 1. Preheat oven to 300 2. Combine first 3 ingredients in a large bowl. Combine oil and next 6 ingredients in a small bowl; drizzle over cereal mixture, tossing well to coat. 3. Line a large roll pan with foil; coat foil with cooking spray. 4. Spread cereal mixture on prepared pan. 5. Bake at 300 for 10 minutes; stir. Bake an additional 7 minutes or just until mixture begins to brown. 6. Remove from oven; sprinkle with salt, and stir well. Cool in pan on a wire rack. 7. ENJOY!!!! #NutritionZone | #NZRecipes

Grilled Jalapeño Poppers... 4 ounces cream cheese, softened (about 1/2 cup) 4 ounces fat-free cream cheese, softened (about 1/2 cup) 1 ounce extra-sharp cheddar cheese, shredded (about 1/4 cup) 1/4 cup minced green onions 1 teaspoon fresh lime juice 1/4 teaspoon kosher salt 1 small garlic clove, minced 2 tablespoons chopped fresh cilantro 8-10 center-cut bacon slices 14 jalapeño peppers, halved lengthwise and seeded Cooking spray Get Cookin: 1. Mix first 8 ingredients into a mixing bowl 2. Cut jalapeño peppers in 1/2 and remove seeds 3. Stuff mix from bowl into each popper and wrap with 1/2 bacon slices or chop and put on top of poppers 4. Saturday Slimdown One Pan Mexican Quinoa > 1 tablespoon olive oil... > 2 cloves garlic, minced > 1 jalapeno, minced > 1 cup quinoa > 1 cup vegetable broth > 1 (15oz.) can black beans, drained and rinsed > 1 (14.5oz.) can fire-roasted diced tomatoes > 1 cup corn kernels > 1 tsp chili powder > 1/2 tsp cumin > Kosher salt and freshly ground black pepper, to taste > 1 avocado, halved, seeded, peeled and diced > Juice of 1 lime > 2 tbsp chopped fresh cilantro leaves Get Cookin’: 1. Heat olive oil in a large skillet over medium high heat. 2. Add garlic and jalapeno, and cook, stirring frequently, until fragrant, approx. 1 minute 3. Stir in quinoa, vegetable broth, beans, tomatoes, corn, chili powder and cumin 4. Season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until quinoa is cooked through, about 20 minutes. 5. Stir in avocado, lime juice and cilantro 6.
