Taquito Tuesday! Looking for a tasty vegetarian taquito to fill that weekday craving? Try this high protein recipe: . Black bean tacos- cup black beans ... cup corn tsp garlic powder tsp salt 1 tsp ground cumin Optional 1 cup Mexican blend cheese . Directions: 1. Preheat oven 400 F. 2. Mix corn, beans, cumin, garlic powder, salt, cheese in a bowl. 3. Place tortillas between two damp paper towels and microwave for 20-30 seconds (2 tortillas at a time). This will prevent cracking the tortillas when rolling. 4. Place 2 tbsp of mixture in tortilla on side closest to you and roll it up. Use toothpick as needed to hold together. 5. Place taquitos on foil-lined baking sheet sprayed lightly with cooking oil. Bake for 25 minutes.
