This weeks featured RD is Minerva Valencia! She started as an intern and has become a valuable team member at NTE! #TakeoverTuesday Hello, my name is Minerva Valencia. I have worked for NTE for 2 years. A wonderful company that has nourished my growth in the field of dietetics and allowed me the flexibility to run my granite business, as well as conduct nutrition classes upon request. I am a mother of 3 teenagers and a wife of 20 years. When not working, I love spending time ...with my family in nature, hiking, swimming, or relaxing on the beach. I enjoy doing yoga and meditation regularly, which keeps me grounded and balanced. As a dietitian, I have learned so much about food and its true purpose, which is to nourish the body. Experiencing delicious food is one of my passions. My life happens around food. It brings family and friends together and a good time. Lets not forget hydration! I relish in wine tasting and experimenting with mixed drinks at home. Thank you NTE for having as a part of your team! See more

The RD featured this week comes from one our amazing RDs in the Central Valley, Rachel! My name is Rachel Heinrich. In October, I will have worked for DDI/NTE for 5 years and I can’t think of a company I’d rather work for! I live in Modesto in the middle of an almond orchard where I’m lucky enough to have several horses, a donkey, chickens, and a dog named Shasta. I have 14 wonderful nieces and nephews and they make life so much fun! ... I’ve relished the extra time at home this pandemic has allowed me to have and I’ve been able to spend more time in my garden. Finally, I had time to build my flower and herb raised boxes! I love spending the cool of the morning picking flowers and delivering the bouquets to family and friends. I’ve added a few new items this year to my garden and have enjoyed drying my own chamomile, fermenting pickles, and growing Brussels sprouts and broccoli for the first time! My favorite things to grow: Armenian cucumbers, lemon cucumbers, tomatoes, peppers, beets, carrots, lettuce, sugar snap peas, green beans, Swiss chard. As you can tell, I love the outdoors! I love to play tennis, ski/snowboard, snowshoe, and pretty much anything else that’s active and outdoors! I’m an avid thrill seeker and administrate an adventure group called Wayfarers where we mostly day hike and backpack. Our recent adventures involved taking rock climbing classes, spelunking/cave climbing, and whitewater rafting the American river. During walnut harvest I can usually be found working with my family in the walnut huller on nights and weekends. I am so looking forward to someday soon seeing all my coworkers again and meeting all the ones I haven’t met yet! I’m praying you all stay healthy and sane during this very trying time. God Bless!

This #takeovertuesday is brought to you by one of our seasoned RDs! Hi everyone! My name is Barbora Mistry and I’ve been working for NTE for over 4 years. I’m passionate about making a difference through my work as a dietitian and I’m always looking for ways to grow in this profession. I like to draw inspiration and insight from others, whether that’s my coworkers or my interns. In the last few years I have found a new passion as a dietitian: learning about Intuitive Eating a...nd the Health At Every Size (R) approach to nutrition and healthcare; Instead of addressing health through a weight-centric, diet approach, I have learned about the benefits of a weight-inclusive, anti-diet approach. Much of my inspiration has come from the works of fellow RDs @evelyntribole & @chr1styharrison (go check them out and follow). I want to continue this journey of learning to be able to better serve others in a more inclusive and fulfilling way, while acknowledging the immense privilege I hold as a white, cis female in this field and in this world. In my spare time, I spread good vibes and smiles through my Zumba classes, which I’ve been leading for over 7 years! I can’t even describe how much joy the movement and music of Zumba has brought into my life (and my students’ lives)... I encourage anyone to try a class if they have never experienced one (Visit http://barboraz123.zumba.com/ for my Virtual Classes)! Lastly, I need to mention: I LOVE food and I’m lucky to have a husband who can make me some delicious meals! See more

For Motivation Monday, we are featuring David Trask, RD, Director of Operations, Central Valley! My name is David, and I am a fellow dietitian. I've spent most of my professional career as a consultant for DDI/NTE . After studying a wide variety of subjects in college, I settled on nutrition. I find nutrition both fascinating and useful to my personal health. Give me some space to run, a good selection of fresh fruit, and I'm content.

Today’s Featured RD is our Culinary Director, Paul Ladewig. Paul has been with us at NTE for 3 years and has been a dietitian for 4 years. He has always been fascinated with the influence that food has on our culture and our everyday lives. At this point in time he has been a chef for 22 years in some capacity from restaurants to hospitals and hotels. There are two things that anyone will notice after only a few moments with Paul. Those things are that he loves people and he... loves food. It’s no wonder that he ended up eventually expanded from being a chef to getting his degree in Nutrition and becoming a dietitian. Since coming to NTE, he has used his knowledge and experience to impart that same attitude to others. By teaching proper cooking techniques and time management he tries to ensure that residents can get good food and kitchen staff can feel pride in what they provide. Achieving delicious meals that are nutritious and cost effective are his passion. See more

Motivation Monday! Today we are featuring our Director of Operations in the Central Valley, Nikki Andres! Nikki Andres has been a consultant RD for 15 years with Dietary Directions and Nutrition Therapy Essentials: I’ve always been passionate about music however have never really had an artistic bone in my body. For the last few years, I’ve been wanting to take a Modern Calligraphy class but never pulled the trigger. Now with quarantine, I’ve started taking zoom Modern Call...igraphy classes (with the amazing local artist Shelley from Scribble & Script, find and follow her, she’s awesome) and found a new passion for writing and creating. Along with watching fun how-to-draw You Tube videos with my sons, I’ve really discovered how fun and therapeutic it has been for me to write and draw in the midst of our crazy world right now. I’m still in the stages of infancy but would encourage even those who think they have no artistic talent to give it a try. Whether it’s writing fun, cute phrases or drawing silly characters (yes I am proud of my Captain Underpants drawing!) it’s been fun to create and let my imagination soar!! See more
