Copycat Chipotle Chicken Burrito Bowls Chipotles in adobo sauce is a great way to get that deep, smoky, spicy cooked-all-day flavor into a quick weeknight dish. Look for simple ingredients if you're buying a jar at the store (OR make your own! Lots of recipes online if you Google them) Chipotle chiles are dried, smoked jalapenos. Adobo is a tangy, slightly sweet red sauce. ... So the ingredients may include peppers, spices, herbs, garlic, vinegar etc. I like to freeze the extra peppers in adobo & sauce, in an ice cube tray for future use. makes 4 servings 2 cups cooked brown rice 1 (15oz.) black beans, drained and rinsed if using canned 1/2 cup shredded Monterey jack or cheddar cheese 4 cups shredded lettuce of choice 1 cup natural salsa 1/2 cup plain Greek yogurt 1 large ripe avocado 1 Tbsp freshly squeezed lemon juice 1 Tbsp olive oil, or avocado oil a small handful of fresh cilantro, chopped lime wedges, to serve For the chipotle chicken: 1-1/2 lbs. boneless, skinless chicken breasts, cut into large pieces 2-3 chipotle peppers in adobo sauce juice of one fresh lime 1 tsp onion powder 1/2 tsp garlic powder 1 tsp ground cumin 1 Tbsp olive oil, or avocado oil 1/4 tsp black pepper, or to taste 1/2 tsp sea salt, or to taste Instructions: Start by preparing your marinade. In a small bowl add all the marinade ingredients and whisk until well combined. Place the chicken pieces into an airtight storage container, or into a large, reusable bag and pour in the marinade. Seal your container tightly, then shake a bit to coat the chicken really well with the marinade. Refrigerate for 2 hours up to overnight. When you're ready to cook your chicken, remove from the refrigerator and let it sit on the counter at room temperature for about 10 minutes.

This Kale Chicken Salad with apples, dried cranberries, chopped pecans, blue cheese crumbles and mandarin dressing is loaded with flavor, super nourishing and filled with nutrients. . Start with making the dressing. In a small mason jar squeeze in the juice of two mandarin oranges (approx. 2 tablespoons) then add 1 tablespoon of extra virgin olive oil, a splash of apple cider vinegar, 1/2 teaspoon sea salt, 1/4 teaspoon ground black pepper and 1/2 teaspoon garlic powder.... Close the lid tightly and shake well. Add two cups of chopped curly kale with the stems removed to a bowl and pour at least half of the dressing over the kale. Use clean hands to massage the dressing into the kale then add diced apple , diced or shredded rotisserie chicken (or any other white meat chicken you have on hand), dried cranberries, chopped pecans and blue cheese crumbles (sub feta if you don’t like blue cheese) then drizzle the remaining dressing on top. For the salmon season both sides with olive oil, sea salt and cracked black pepper then grill on the stovetop in a grill pan on medium high heat for 3-4 minutes on each side. For the salad add two cups of baby spinach to a large bowl. Add 1/2 a can of white kidney beans (Cannellini) that have been drained and rinsed along with chopped red onion , sliced green olives, diced tomatoes , 1-2 tablespoons extra virgin olive oil, the juice of half a lemon and season with sea salt and cracked black pepper. Simple Ground Beef + Sweet Potato Skillet A QUICK One - Skillet recipe packed with loads of fresh, savory flavors! It's SO GOOD, and SO SIMPLE. Delicious.... Less than 30 minutes, and Less dirty dishes! Best mid-week dinner idea. For Meal-Prepping: Divide your beef sweet potato mixture equally into 4 separate air-tight containers. I added 1/3 cup brown rice to each serving. Cover with lids and store in refrigerator for up to 4 days. makes 4 servings Ingredients: 1 Tbsp avocado oil, or olive oil 1-1/2 lbs lean grass fed ground beef, or ground turkey 2 fresh garlic cloves, minced 1 sweet onion, diced 2 red bell peppers, diced 2 medium sweet potatoes or yams, diced 1 cup frozen or fresh organic corn 1/2 cup beef broth 1 Tbsp dijon mustard 1/2 cup tomato sauce or crushed tomatoes 1 tsp of oregano 1/8 tsp crushed red pepper flakes sea salt and freshly ground black pepper to taste, about 1/4 teaspoon each fresh parsley, chopped cooked brown rice or quinoa, to prepare your meal prep bowls Instructions: Rinse and scrub your potatoes thoroughly to remove any dirt. Pat the excess moisture with a paper towel. Chop your sweet potatoes into 1/2 inch cubes and dice your peppers and onion. Heat oil in a large skillet over medium-high heat. Add in garlic and saute until fragrant. Immediately add in your ground meat and cook, stirring well and breaking it apart with a wooden spoon until it is small crumbles. Cook until browned about 5-7 minutes. Once browned place the beef on a covered plate, and set aside. Using that same skillet, add in onion, bell peppers and sweet potatoes; cook until slightly tender crisp. Pour in the broth, add Dijon mustard and tomato sauce. Cover and simmer for 12-15 minutes until potatoes are tender. Next, stir in your cooked ground meat and corn. Add in oregano, crushed red pepper flakes, sea salt and black pepper to your taste. Stir until everything is well combined. Cook for 2 minutes more until liquid is reduced a bit.

Thanks to @doc_hierholzer for sharing this amazing recipe for mini pumpkin pies. You can all thank her after you heat up your ovens. Recipe : 180g canned pumpkin, 1/3 cup muscle egg, 80g fat free Greek yogurt, 1 egg yolk, 1/4 tsp xanthan gum, vanilla, stevia, cinnamon, nutmeg, and clove to taste preference. Using mini pie shells. Baked at 400 for 12minutes and 300 for 10 minutes. They are the cutest! Macros: 16c/5.5f/4p per pie! I #pumpkinseason and my favorite flavor #muscleegg

Shrimp Thai ~ Inspired Salad Flavor EXPLOSION happening right here you guys! What You'll need:... A big bunch of various fresh herbs A few veggies and a pound of raw shrimp 1 hot skillet to quickly cook your shrimp, and just a few minutes to chop everything up... Shrimp Thai ~ Inspired Salad is excellent for food prep too! Simply divide everything into four equal servings, then store in sealed containers for up to 2-3 days in your refrigerator. makes 4 servings Ingredients: For dressing: 4 Tbsps high quality extra virgin olive oil, or sesame seed oil 3 Tbsps white wine vinegar, or apple cider vinegar juice of two fresh limes 2 Tbsps raw honey 2 fresh cloves garlic 1 serrano pepper, seeded 1 cup packed fresh herbs of your choice (mint, basil, cilantro, green onions, parsley) 1/2 tsp sea salt For the salad: 1 Tbsp olive oil, or avocado oil 3 cloves fresh garlic, minced 1 serrano pepper, minced 1 lb raw shrimp, peeled and deveined 1 small green cabbage, very thinly sliced 4 cups baby spinach or other greens, roughly chopped 3 large carrots, peeled and grated 1 cup edamame, shelled and cooked 1/2 cup cashews, roughly chopped 1 Tbsp sesame seeds Instructions: In your blender or food processor, pulse all the dressing ingredients until smooth and well combined; refrigerate until ready to use. Next, heat 1 Tablespoon oil in a skillet over medium-high heat. Add garlic and the minced serrano pepper, stir-fry for 1 minute just until garlic is fragrant. Immediately add in your raw shrimp and a pinch of sea salt; cook stirring constantly, turning once, until shrimp become opaque and cooked through, about 3 minutes total. Remove from the heat and roughly chop them up. To assemble: place your shredded green cabbage, spinach, carrots and edamame into a salad bowl. Add shrimp, then drizzle your prepared dressing on top. Add cashews and toss until all the ingredients are well coated. Sprinkle with sesame seeds, then refrigerate for 15 minutes for best flavor. See more
