Nozomi Restaurant 08.07.2021

Todays wait time was 3hrs at Alaska Airlines. So I was able to catch up on the gram. We source our Mirugai and Oysters directly from Washington. The shipment needs to be picked up at airport. Covid increases the wait time but in the end, its worth it. Wild Geoduck (Mirugai) has a deeper ocean taste than farmed. Though at times, the color is darker, the intense flavor of the clam is much different from the farmed ones. The oysters are farmed but fresh as can be. Both M...irugai and Oysters were in their natural habitat until yesterday. My job is to find and source the best and freshest ingredients to hand over to our skilled chefs to work their magic. As soon as the package was brought back to Nozomi, Chef Yasu started cleaning the Mirugai for todays Lunch orders and prepping them for dinner operation. The work and dedication behind the scenes Our Chefs (and all chefs in the industry) is often overlooked. Here at Nozomi, we just want to give our customers the opportunity to enjoy the Best we can source and offer. One of the most highly sought after item in Japan is the Kuro-awabi. These 2 beauties were pre-ordered by one of our regulars. Kuro-awabi these sizes are often prioritized for the high end ryotei and sushi restaurants in Japan, but our Vendor was able to win out the auction for us. We dont often get to handle such an item and we are very excited for its arrival this afternoon. These will be steamed by our Head Chef Yasu, prior to being plated for sashimi. Chef Yasu will also prepare a kimo-shoyu (soy sauce made with the abalone liver). Many specialty items can be pre-ordered as we work with our Japan vendor directly to seek your next culinary desire. After testing out numerous suppliers from Japan, we have come across a Supplier that custom made the right texture and flavor to bring you the Best Unagi you have tasted. The meat is soft and fluffy, the skin is very soft, and with no fishy smell, but full of natural unagi flavor. Our supplier at Toyosu has custom made this unagi for Nozomi and can only be eaten here. These tomatoes are grown in Corbari Italy in volvcanic soil, rich in minerals. Only relying on natural irrigation from the mist and dew from the ocean and nature. Just arrived. Live Hokkaido Kegani (Hairy Crab) Got 2 in just now. Will be prepped and ready for sale starting Wednesday. 1 pounder for $90. Highly sought after for its sweet meat and its delectable mustard. Its a must try item. Will be served with Chef Yasu’s homemade Konbu-bonito vinegar dipping sauce. Nozomi is closed today so Please DM me to reserve these 2. Planning to bring in each week if larger size is desired, we can also request those as well

Barbecued all weekend so had to get Shabu Shabu for tonight from @shinsengumisumiyaki_shabushabu Pork and Beef Shabu dinner. Got a tip from a friend to get the spicy soup and add rice at the end for a mouthwatering Zosui at the end. The spicy soup is spicy enough to sweat out the weekend fatigue. Drink with some Iichiko and its a fail proof meal. Thank you for supporting all local businesses

We have been fully staffed since the lock down began mid March and are extremely thankful for everyone’s support. I have nothing but the best of things to say about this staff and how they kept pushing themselves through these last few months. So I am truly Happy to say that this crew will take 2 days off to rest and to recharge so we can get back into the grind again. Thank you to this awesome team for doing what you do.
