I should have taken a photo, but you can admire Nom Nom Paleo's photo :). I made these meatloaf muffins yesterday for the kids lunches today and they are delicious! I tweaked the recipe a bit and added 2 stalks of celery and 2 large carrots and removed the rosemary. Made some last minute blueberry and lemon zest muffins for the kids lunches tomorrow. None of the zucchini muffins made it into the freezer. These were delicious! Happened to have all the ingredients on hand so we made these Crispy Chocolate Chip Cookies and they were delicious! I didn't have palm shortening on hand so I use butter instead.
