Nightbird

A little about @nightburger138! Our casual burger and sammy pop-up was born out of necessity during the pandemic, but it’s been a really rewarding project for us. When Covid struck the Bay last Spring and the SIP order was mandated, we realized there really weren’t many lunch options left in Hayes Valley, with most places shuttered and boarded up. We wanted to offer a delicious, comforting mid-day menu for folks in our hood. After all, we were already there in the kitchen eve...ry day after pivoting from tasting menus to cooking meals to provide for frontline healthcare workers, the houseless, elderly, and other people in need through our partner programs like @sfnewdeal, SF Great Plates and @frontlinefoods (programs we are so grateful for because it allowed us to keep kitchen staff on and continue healthcare for our furloughed team). Nightburger is really @ronboyd138’s baby, inspired by his roots. His family had a greasy spoon in the Sunset when he was growing up, which is where he started his hospitality journey. He has so many fond memories of the place and wanted to pay homage to it. In his words I mean, if we are being honest, Nightburger is really is a truck stop burger joint with really great sourcing! In addition to our @flannerybeef NightBurger (which, if you’ll allow us to brag a bit, was named one of the Bay’s top burgers by @soleil_ho in January!) we are serving up a variety of sandwiches as well. Like this bad boy: our crispy chicken behemoth on a Kaiser roll. We marinade the chicken in buttermilk heavily seasoned with Shio Koji (shout out Greg of Japanese Pantry!) which adds a bit of salt to the meat, but also a pronounced sweetness and a welcome hit of umami. Four years ago today we opened our doors @nightbirdsf. All the fears, all the excitement and all the hard work of every person who helped build this space made us who we are today. Thank you to all the employees, guests, farmers, purveyors and artist who helped us be us.
