It’s another one of those clean-out-your-fridge-I-have-no-food-but-must-eat-something kinda meals. So I threw together some @traderjoes beef-less crumbles sautéed in miso ramen base and garlic. Then roasted edamame, carrots and Brussels sprouts and topped it with quick pickled red onions and ginger in a rice wine and sesame oil marinade all over a big bed of udon noodles and finished with a soy peanut sesame sauce. I toasted and smoked 7 nuts and seeds, created a savory TVP mince, and a savory shiitake ginger dashi with soy milk, blended with a seasoning paste of tahini, sesame oil, soy sauce, Shaoxing, and chili paste.
