Directions: Marinade for chicken 1-2 Tbsp chili garlic sauce 2 Tbsp soy sauce 1 Tbsp Olive oil Fresh cracked black pepper Marinade chicken and set aside for 30 minutes Heat a cast iron skillet with 2 Tbsp butter and 1 Tbsp olive oil . Saute the potatoes. Cook for 8-12 minutes until crisp from outside and fork tender soft from inside . Season with salt and pepper and set aside . Keep the same skillet over medium heat and add 1 TBSp butter, lay the chicken strips in one layer in the skillet, keeping the drained marinade for later. Add garlic and red chili pepper flakes to the chicken. Cook chicken strips on each side for 1 minute each until nicely browned adjust timing depending on how you like your grilled chicken.Add some fresh herbs like oregano and parsley Then add the sauteed potatoes back to the pan and heat through. Adjust seasoning with salt and pepper if necessary. Add in the asparagus and carrots last they need only a few minutes to cook. Remove from heat and serve immediately your Garlic Butter Chicken Recipe with sauteed Potatoes, garnished with more crushed chili pepper, and fresh parsley.

TURKISH EGGPLANT CASSEROLE Good food has No Borders . The Chinese eggplant from my CSA box gets a Turkish makeover with this recipe . Why not ... it was extremely delicious ... Olive oil will always have my heart this recipe calls for a generous amount . This pan-fried eggplant casserole is technically a Turkish dish . INGREDIENTS: 1 long chinese eggplant, thinly sliced (1/4 inch thick) Sea salt 1/2 Cup Extra Virgin Olive oil 1 small white onion, diced 3-4 large garlic cloves 1/2 teaspoon red chili flakes Dash of cinnamon One 4 ounce can tomato paste or 12 Oz can of diced tomatoes 2 tablespoons finely chopped fresh parsley, divided Directions : 1Wash and slice the eggplant into long slices . 2Generously Drizzle a cast iron with olive oil and sear the slices .set aside . 3Add more olive oil to the pan and sauté chopped garlic and onions till they turn transparent. 4Add in a cup of water and juicy diced tomatoes 5Add sea salt to taste and red chili flakes . Mix in a 2 dashes of cinnamon powder . 6cook for few minutes and layer the eggplant slices like lasagna . 7Sprinkle fresh parsley and bake in the oven for 20-25 min . Cover with foil to bake . 8Remove from oven drizzle olive oil more parsley and eat up! Tandoori / grilled CHICKEN TIKKA SALAD My Monday’s lunch Super easy fresh and wholesome and GOURMET .., ... I always look forward to this salad combo .Grill chicken a head of time or in most cases last nights BBQ. This amazing grilled chicken was made by hubby( even better ) RECIPE( ish) 2 Cups Mixed kale cabbage blend ( salad mix) Gives a great crunch and body to this salad . A handful of Arugula leaves Pickled Red onions 1/3 cup corn ( room temp.) Shredded carrots ( optional) 6-8 juliennes of fresh ginger ( secret ingredient) Sliced chicken tikka pieces Prepare Dressing ( 2 Tbsp olive oil + 2 Tbsp lemon juice+ 2 Tbsp Greek yogurt + few springs of mint and cilantro + 2 Tbsp honey) Blend together . Assemble salad and pour the dressing over as required. Mix and get ready to treat yourself . Store the leftover dressing for later . Tangy ,sweet ,crunchy and flavor packed chicken in every bite is just delicious! SEMOLINA CAKE WITH CARDAMOM AND ALMONDS I made this beautiful Cake in memory of my sweet Grandma who always made THE WORLD’S BEST Semolina Halwa / dessert . It is her Birthday on 11th July and each year I remember her fondly and make a dessert to celebrate her life . ... I decided to make an Eggless Semolina Cake this year as a sweet memory of her. Treat your taste buds to the super moist and decadent Classic made with semolina and drenched in a mild honey and cardamom syrup. There are different versions of this classic also known as ‘Basbousa ‘but this one is egg free and vegetarian Soaked in light syrup made with honey and garnished pistachio and almonds it’s a delightful cake loved by all in my house . Recipe share Ingredients 1 cup Semolina 1 cup sugar 1 tsp baking powder 1/2 cup melted butter 1 cup plain yogurt 1/2 cup milk Garnish Sliced almonds and pistachios ( optional) Edible Rose petals ( optional) For The Honey syrup 1 cup water 4 tbs honey 1/4 tsp cardamom powder Boil water with cardamom . Let it cool . Mix honey once the water has cooled down .Set aside to pour over the baked cake . Instructions 1Preheat the oven to 350 F 2In a glass bowl mix together semolina , sugar and baking powder . 3Next add the Melted butter , yogurt and milk . 4Mix well and set aside for 15 min. 5Line the baking pan with parchment paper . Bake in a 8 inch round pan or 9 inch spring form round pan for 35 -40 min until done . Once the cake is baked and out of the oven pour the honey Cardamom syrup All over .The cake becomes extremely moist and flavorful with the syrup.
