Yesterday during my cooking someone asked about differences in eggplant types. The long ones are Asian type and are good in curries etc since they hold their shape better when cooked; and short fat ones are more commonly found in stores with various different names and are great for grilling, making eggplant steak, roll ups, etc. the store just got it in stock so I thought I’ll post the pics. I made Eggplant and potato curry yesterday on zoom. ( called Baingan-Aloo). Used my mini chopper to chop onions, cut by hand eggplant into cubes, boiled peeled cut potatoes in microwave. Cooked onion in oil first, added tomatoes, spices and cooked them until they are mixed well. Added eggplant (baingan) to pan, mixed well reduced heat, covered and let the eggplant cook for 5 mins. Added boiled potatoes, salt, water and cooked until all came together. Added lemon juice and cil...antro and finished. tastes really good. Different spices I added were turmeric, chili powder( can be replaced by curry powder- the amount depends on your taste) doesn’t take long after veggies are prepared before. It took only 15 mins. I used large fat eggplant yesterday which is good for grilling mainly; other long thin varieties such as Italian or Japanese eggplants which I couldn’t get yesterday, will work great in these curries since they hold shape better. Eggplant could be replaced with zucchini, carrots, cauliflower etc. potatoes help make the curry creamy without adding cream.
