FAJITA FRIDAY and TACOS de PANZA We haven't had these in a while and last time they were gone FAST. They are pork-belly tacos with a slightly sweet roasted tomato salsa with guajillo chile. Fidel braises the pork belly, dices it and then crisps it on the flat grill. ... The result? A tasty, but soft, but crispy and delicious cousin-to-bacon taco filled with pork belly.
