Cilantro Chicken by Sheena! Enjoy this easy-to-make recipe in between all of the Holiday cooking. Directions: -Blend marinade ingredients well in blender. Place chicken pieces in large zip sealed bag. Pour marinade over chicken, squeeze out excess air and seal bag. Turn to coat chicken well. Refrigerate 2-4 hours, turning occasionally. ... -Heat oven to 400 degrees. Remove chicken from marinade and place in shallow roasting pan or broiler pan and bake for 20 minutes. Set oven to broil. Broil chicken for 5-10 minutes, until marinade is dry on the chicken. *makes 4-6 servings depending on the size of the chicken breast Chef's Notes: This recipe can be grilled as well. Cut the chicken into pieces. Place pieces on skewers after removing from marinade. Grill for 10-15 minutes, turning 2-3 times.
