We were elated when Pablo Moix approached us about his newest venture, Rare Character. We have shared countless drams over the years with Pablo at his LA bars and restaurants (Old Lightning, Scopa, Dama), generally leading to a lineup of comparison tastes, and trust him as one of the most passionate, focused, and straight-up nerdy players in the spirits game. It’s no wonder he would take his obsession with collecting rare bottles to the next level, utilizing his rich network ...to amass a selection of diverse single barrels that spoke to his curiosity; his ongoing quest for the extraordinary. Tasting his barrel samples alongside famed, high-priced bottles, it was clear the treasure Pablo had uncovered in the historic rick houses of America’s heartland. For Littlebear’s first ever barrel selection, we picked an energetic five year-aged high-rye Bourbon Whiskey 60% corn, 36% rye and 4% malted barley originally distilled in Indiana then moved to Tennessee to be aged in a more modest historic facility with exceptional airflow, allowing the whiskey to have better integration with the barrel resulting in a bourbon showing much older than its age. Finished in Stanford, Central Kentucky, this barrel was left open to the natural climate to round out and further soften and sweeten. But note this is higher rye content than what is typically found in bourbon. No cloying corn syrup or greasy cornbread qualities here, this bourbon possesses a much more dry and elegant sweetness reminiscent of fine salted caramel. Dry cacao, early season stone fruit, bitter almond, sweet tobacco, juicy mango skins. Fans of older Four Roses or high rye Willett Family Estates whiskey to the front of the line. Our single barrel was bottled at Cask Strength, a walloping 120.76 proof. Making its sippability criminal. Available at the shop now Obviously only limited quantities available.
