New Mead on Tap!! Alexander Strawberry PB & J Preview Keg Originally intended to be the bookend for our weapon series last year, Alexander was and is still our experiment in scaling up releases that we were proud of last year. A strawberry peanut butter and jelly mead, increasing the batch size created a challenging problem for us. Techniques used to render out peanut flavor weren’t exactly possible when going from making a small, thirty gallon pilot batch ("Broadsword") ...to a full on six barrel production lot. The result is a mead with an unmistakably strawberry PB & J bouquet, with a more fruit-forward finish on the palate. This version of Alexander is still a work in progress. The remainder of what was made is resting in bourbon barrels for the foreseeable future, and will more than likely receive a couple extra tweaks. There is only 1 keg of this available, so get it while it lasts!

We just tapped "Blue Eye"! If you've never had B.E., this is a variant of our blueberry mead I.H.O.P.! This version was made in collaboration with our good friends @thelabdining and @mostracoffee! The Ethiopian coffee used for the 2020 blend turned out fantastic, with a distinct coffee aroma coming off the nose and huge blueberry and vanilla on the palate. Dare we say, this is the best batch of Blue Eye we've made yet! There is only 5 gallons of this available, so yet it while it lasts!

Not a bad way to start a Friday! If you haven't noticed, most of our recent releases have been aged in barrels. Our barrel aging program is something we have been working to build throughout this past year and we don't see that slowing down anytime soon. Today, we'll be filling barrels with "Prelude", our traditional orange blossom mead, as well as a certain black currant mead. Who knows.. there might even be a peanutty, strawberry jammy mead getting filled.. So.. what else would you like to see us put in a barrel?

And now, for the last weapon in this series.. bottle #9.. Polearm! It’s not often that we use honey from outside the state, let alone the country. There have been experiments with Mexican and Brazillian honey, but this is quite different. The flavors were Dynamite on the palate. Allow us to introduce you to honey from El Salvador. This honey, considered wildflower, showed great herbal and spicy notes. To let the honey really shine, we paired the raw qualities of this me...ad with a beautiful Journeyman Featherbone barrel that somehow fell into our lap. The resulting mead was unique in it’s own right, but this really turned into something special with the extra oak contact time. The marriage of the naturally herbaceous qualities of the honey with this barrel created a complex sipper that we never expected, and we may never be able to re-create again.. now, if only we could find the keys to the Highwind. This mead was made with honey from Nooma Honey. Classified as a wildflower honey, it is harvested by local beekeepers in the mountainous Chalatenango region of El Salvador. The honey is unfiltered and unpasteurized, bringing us the purest representation of the natural flora of the El Salvadorian mountain ranges. It’s bottle pickup weekend! Many of you know the path that we use for our drive-thru bottle pick-ups, but it doesn’t hurt to throw it out there again. We will be handing out all bottles that were purchased through Eventbrite via the rear, production side of our building. Swipe left for the streamlined pick-up path. The pick-up availability is as follows: Thursday (Member Pickup Day): 4pm-8pm Friday: 4pm-8pm Saturday: 12pm-6pm... Sunday: 12pm-6pm To-Go can sales also resume this weekend. We will do our best to make those cans available at time of pickup, but please note their may be a short delay depending on when they are ordered relative to when you show up. We can everything to order. We look forward to seeing everyone this weekend, and can’t wait to see what you think of our latest releases!

We've made it to bottle #8 of our first ever bottle series! Allow us to introduce "Rifle", our banana's foster inspired bourbon barrel aged meadowfoam mead! Desserts can be a very creative canvas for mead makers. Some may see the mimicking of flavors as a Nightmare. Not us. The inherent sweetness in most confections makes for a flavor profile that is familiar for most, and while polarizing, bananas are a flavor that most people can recall easily. Banana bread, banana puddin...g, banana cream pie.. or our favorite, bananas foster. Rich banana, cinnamon, vanilla, warming spices, and boozy rum undertones. It’s quite the Chaos of flavors. And the dish is lit on fire! What’s not to like?! This mead is the liquid incarnation of all of that, with our own twist of course. We used Meadowfoam honey. We added some lemon for citrus, as well as pecans to remind us of the textural difference that is needed is a gooey dish like this. And while we didn’t have a rum barrel handy 6 months ago, this mead did get the bourbon treatment. The result? Truly something that your inner Galian Beast would want to hoard all to yourself. We're getting close to wrapping up this series with bottle #7 of 9, "Megaphone"! If you’ve been to our tasting room before it will be no surprise that we love our citrus. From our pineapple ciders to hard sodas, "OJ Did It" (a pineapple tangelo cider) to the first mead we ever made Prelude, we find ways to highlight citrus (from blossom to fruit) as much as we can. The other thing we do well is dessert meads (read: Bruiseberry = 2nd best in the world). It’s time for those t...hings that we do well to come together for this series. We loved the way our first citrus dessert inspired mead, Lemonlicious, turned out.. so we took it a step further. Enter Megaphone. This series was always meant to be small releases, experimental, and fun. A roll of the "Dice". A pull of the "Slots". For bottle seven we started with a base of meadowfoam honey. What came out of our tanks after fermentation was completely laid to rest in a Buffalo Trace barrel for 6 months. Once the spirit character we were looking for showed through, that’s when the magic of blending started. After sweetening to taste, fresh lime juice and lime zest were added. Striking a balance between sweet honey, sharp citrus, and barrel spice is no small feat. The citrusy, floral mead is delicately melded further with vanilla and a small amount of salt, lactose, and almonds. The resulting libation smells of bright green limes with a decadent graham cracker crust. The taste? We think you’ll be grabbing a Megaphone yourself to "HPM Shout" out how good it is. Allow us to introduce the 6rd bottle in this 9 bottle series, "Shuriken"! Shuriken Weapon Series #6 - If this series hasn’t thrown your palate through the Gauntlet yet, please welcome Shuriken to the party. This mead is based on our Marshmeadow (meadowfoam traditional mead) but is fermented with slightly less honey. Post fermentation it is then thrown straight into bourbon barrels to age. The natural vanillin present in the meadowfoam honey is pushed even further by the... heavily charred used spirit barrels. The Clear Tranquil liquid we had on our hands after being removed from the barrels beckoned for complementing flavors so we paired it with our friends: coconut, cocoa nibs, and vanilla. These late additions make for a remarkable chocolate coconut nose and induces memories of the island flavors we know and love. Rest assured, there are no small, subtle flavors here. It's been a busy week, and we're already a little "bruised" up.. and it's only Thursday! An increase in production capacity means that we also need to have a more efficient way to package our meads and cider. As many of you know, since the beginning, we've bottled, corked, sleeved, and labeled everything by hand. From our original small batch of Bruiseberry and Miel, it has always been one bottle at a time. Since then, we've made thousands of bottles, taking a couple hundred ...hours of man power. Corks were plunged one at a time, by hand. Bottling days were strenuous and long, but being able to share our passion with you has always made it worth it. Yesterday, our jobs bringing bottles into your hands got just a little easier. We now have a 4-head bottle filler and an electric corker. Not only will these new tools enable us to bottle more mead in a shorter amount of time, but it will also increase the quality of both our bottle fill levels and corks. This new equipment will go into service next week as we begin bottle more of our Weapon Series bottles! On another fun note, today we received another delivery. This one will make drinking our meads, ciders, seltzers, and anything else we made just a little.. cooler We can't wait to share a drink with everyone in the near future!
