Cantonese Roast Pork Belly . Serves: 8 servings Ingredients 3 lb slab of pork belly 2 teaspoons Shaoxing wine 2 teaspoons salt 1 teaspoon sugar teaspoon five spice powder teaspoon white pepper 1 teaspoons rice wine vinegar cup coarse sea salt . Cantonese Roast Pork Belly Save Print Serves: 8 servings Ingredients 3 lb slab of pork belly 2 teaspoons Shaoxing wine 2 teaspoons salt 1 teaspoon sugar teaspoon five spice powder teaspoon white pepper 1 teaspoons rice wine... vinegar cup coarse sea salt . Instructions Rinse the pork belly and pat dry. Place it skin-side down on a tray, and rub the shaoxing wine into the meat (not the skin). Mix together the salt, sugar, five spice powder and white pepper. Thoroughly rub this spice mixture into the meat as well. Flip the meat over so it’s skin-side up. Let it dry out in the fridge uncovered, for 12-24 hours. Preheat the oven to 375 degrees F. So, to do the next step, there’s actually a special tool that restaurants use, but we just used a sharp metal skewer. Systematically poke holes ALL over the skin, which will help the skin crisp up, rather than stay smooth and leathery. The more holes there are, the better, really. Place a large piece of aluminum foil (heavy duty foil works best) onto a baking tray, and fold up the sides around the pork snugly, so that you’re creating a kind of box all around it, with a 1-inch high border going around the sides. Brush the rice wine vinegar on top of the pork skin. Pack the sea salt in one even layer over the skin, so the pork is completely covered. Place in the oven and roast for 1 hour and 30 minutes. If your pork belly still has the rib attached, roast for 1 hour and 45 minutes. Take the pork out of the oven, turn on the broiler to low, and position the oven rack in the lowest position. Remove the top layer of sea salt from the pork belly, unfold the foil, and place a roasting rack on the pan. Place the pork belly on the rack and put it back under the broiler to crisp up. This should take 10-15 minutes. The broiler should ideally be on low so that this process can happen gradually. Dare to try a Cuban sandwich? . INGREDIENTS 1 loaf Cuban bread cup yellow mustard 8 slices Swiss cheese, about pound 16 slices maple glazed honey ham, about 1 pound 16 slices hot capicola, about 1 pound 8 - 12 slices dill pickle planks 4 tablespoons unsalted butter, softened . 1.If you are using a panini press, preheat to medium-high. (If do not have a press, you can use a sauté pan). 2.Slice the loaf of bread into 4 equal pieces and then each piece lengthwise. Spread the... butter on the outside of each half and then spread the mustard on the inside of each half. 3.Cover the inside of each half with swiss cheese. 4.On one half of each sandwich, layer 4 slices of maple glazed honey ham and 4 slices of capicola. 5.Place 2 -3 pickle planks on top of the ham and then close the sandwich. 6.Place the sandwich in the panini press and place something heavy and heat proof, on top of the press (I use a sack of flour, but several cans of veggies will work too). Cook until the cheese is melted and the outside is crispy, about 5 minutes. If you are using a sauté pan, heat over medium-high heat. Transfer the sandwich to the pan and then place a flat-bottomed dish like a baking dish or smaller pot on top weighted with something heavy, like a sack of flour or canned food.
