Spring weather is calling everyone to hit the road - along with the roll out of vaccines and things opening up. Keep it safe! Hit the road! Kids need it. Parents need it. students need it. Adults...EVERYONE needs a refresher. As you are planning keep it safe! We are so happy to have so many visitors back to happy girl and Monterey and are grateful for the guests who are keeping it respectful to all those they interact with. In one sense we are excited to serve the masses again and on the other hand it is a little crazy! We forgot what a line out the door looked like there for a minute. WOW! We are so happy to share that we had some very special guests at Happy Girl today!! WAFFLES + MOCHI really love to cook in the kitchen with kids and inspire young chefs! They brought with them one of my greatest heroes, Michelle Obama! She came to discuss our summer camps and culinary programs that inspire kids to PLAY WITH THEIR FOOD!!! We had so much to talk about with all of our hopes for the future teaching kids to cook from scratch - healthy and delicious foods!... We feel so honored that on this very special, magical day some of our greatest heroes came to talk with us and about their new program on Netflix! Keep your fingers crossed that Happy Girl might be featured on a show! It is amazing to me that on this day every year, dreams can come true! April 1st is really a day where whatever you write down can become reality! It is a day that I really DREAM BIG! I think it is my favorite holiday of the year!!! Here at Happy Girl we work from the local harvest, rather than from recipes! We are here to offer you suggestions and inspirations and ingredients. This salad was one of Suzannes seasonal specialties for the grab and go case. Golden beets salad with shaved fennel, radish and parsley! YUM! Recipe: Boil the beets until tender. (we boil them whole and it usually takes about 40 minutes.). Meanwhile thinly slice the fennel and radishes on a mandolin... - the trick is to slice them both very thin. Marinate in a light lemon vinaigrette made with preserved lemons. Roughly chop parsley. Remove the beets and peel with a kitchen towel (nice trick Raphael taught us). Slice the beets and add to the salad. Toss in some more lemon juice and salt as needed.
