We take pride in our equipment but that's not the reason we work so hard to keep it in great condition. Proper sanitation heavily influences the quality, safety, and consistency of the wine being produced. Sanitizing the winery equipment and surfaces is required to minimize microbial growth environments and to reduce their counts to non-threatening levels. Without proper sanitation, microorganisms (such as Acetobacter) may come in contact with the wine and produce off-flavors and aromas. https://gravitywinehouse.com/b/winery-sanitation-paa-ozone/

That pretty purple potion is doing a lot for your wine! You're seeing sulfur dioxide, a commonly-used additive in wine. It's important to measure it at the time of bottling. One of it's benefits is that it acts as an antimicrobial agent that helps protect the wine from microbial spoilage. We want to maintain a sufficient amount of FSO2 to protect the wine from these factors, but not so much that the consumer may taste the sulfur.

We all want ladybugs in the vineyard, right? Well . . . Methoxypyrazine (MP) concentration can be such a make-or-break parameter that it’s often a major factor in harvest decisions. MPs in wine can come from a variety of sources (including ladybugs!) and understanding their creation is crucial to prevent high levels. See our latest blog post on the sensitive topic of Methoxypyrazines.
