Ingredients: 1 pound boneless, skin-on chicken thigh meat, cut into one-inch pieces cup white miso 1 teaspoon grated garlic 1 teaspoon grated ginger teaspoon reduced-sodium soy sauce tsp white pepper cup potato or corn starch 1 teaspoons togarashi Canola oil for frying Ingredients for kimchi honey: cup kimchi, chopped and liquid packed in 1 teaspoon chili sambal 1 cup honey teaspoon rice wine vinegar Instructions: To prepare the kimchi honey, in a small food processor fitted with the metal blade, add the kimchi, vinegar, and sambal. Pulse until finely chopped, but not pureed. Add honey and pulse to combine. Transfer to a serving bowl, and allow to sit for 30 minutes before serving. Store refrigerated. In a non-reactive bowl, combine the chicken, miso, garlic, ginger, pepper, and soy sauce with the chicken. Allow to marinate for six hours or overnight. Preheat oil to approximately 330 degrees Fahrenheit, and do not let the oils get too hot or the miso will cause the chicken to burn. Add the potato starch to a small bowl. Wipe any excess marinade from the chicken. Add the chicken to the bowl with the potato starch and mix to evenly coat. Divide the chicken into three batches. Add the first batch to the hot oil and fry until browned and cooked approximately three minutes. Remove the chicken from the oil with a slotted spoon and allow to drain on a paper towel. Repeat this until all the chicken is cooked. Season with the togarashi and serve with kimchi honey.

Ingredients: 1 ripe pineapple 2 tablespoons unsalted butter 4 tablespoons sugar 1 tablespoon brown or demerara sugar 1/8 teaspoon Chinese five-spice powder 1/8 teaspoon kosher salt cup heavy cream Instructions: Place the pineapple on a stable cutting surface and cut off the top and bottom using a sharp knife. Place the pineapple on its base and cut the prickly skin off of the fruit using a downward motion. Cut the pineapple away from the core, and dice into square pieces three-quarters of an inch thick. In a large sauté pan over medium-high heat, melt the butter, then add the diced pineapple. Cook for two minutes to slightly brown the pineapple. Add the sugar and cook until it becomes a rich brown color. Remove pineapple with a slotted spoon and set aside. Add five-spice powder and salt. Place the sauté pan back on the stove over medium heat and stir the cream gradually, adding small amounts at a time. Using a rubber spatula, scrape the bottom of the pan to dissolve and caramelize the sugar left in the pan. Add the diced pineapple back into the pan. Plate the topping over cake, ice cream, or other desserts. Spicy Caramel Wings Ingredients: 3 tablespoons neutral oil sauce (grapeseed, for example) 3 cups fresh pineapple, diced -inch 2 tablespoons garlic, minced 2 tablespoons jalapeños or hot chilis of your choice, minced cup sugar 2 tablespoons ginger root, minced 2 limes, juiced cup fish sauce (Three Crabs brand, if possible) cup of water (if needed) 2 tablespoons black bean garlic sauce 2 tablespoons coarse ground black pepper 2 pounds chicken wings, oven-roasted or precooked cup torn fresh cilantro leaves Instructions: Preheat a large sauté pan over medium heat. Add oil and when the oil begins to smoke, add the diced pineapple. Cook for approximately two minutes, then add minced chilis and ginger, and sauté for one minute. Add garlic and cook for an additional 45 seconds. Add sugar, fish sauce, lime juice, black bean garlic sauce, and black pepper. Add water to thin the mixture, if needed, and bring the mixture to a rapid simmer. Cook for four minutes until the mixture reaches a glaze consistency and takes on a darker color. Add wings and toss in the caramel mixture to fully coat. Pour the hot wing and caramel mixture onto a serving platter, and garnish with cilantro.
