Looks like the Bay Area is not lacking in beautiful weather! Seems like the best part of the week is always on the weekend; lucky us!!! BBQ is on my mind, as I am sure it is on yours -- at the shop, we are here to accommodate all your meaty needs. For the grill this weekend, we have lots of tasty tri tip, pork spare ribs, brisket, rib eye, porter house, filet, pork shoulder, lamb chops, short ribs, and beautiful ground beef for all you burger lovers out there. We will have a ...wide array of sausages, ranging from, but not limited to, bratwurst, mild italian, hot italian, merguez, breakfast, and a duck crepinette, while supplies last. Most importantly, don't forget about the Chow Bros sauerkraut! It is great with all of our sausages and acts as a natural probiotic, which helps keep the stomach happy. Other hidden gems you may not see while in the shop: I just made fresh batches of chicken and beef stock, and we still have some foie gras left for the indulgent crowd. Hi Friends! What a day heat we had on Wednesday!! If that didn't put BBQ on the brain not sure what will. It's supposed to be a bit cooler this weekend, but don't let that damper your cooking spirit! Few great things to mention about this week at the shop. Firstly, we are now carrying Chow Bros sauerkraut that is quite delicious, organic, and super healthy for your digestive system being a natural probiotic. It's a great accompaniment with any of our sausages, garnishing gr...ass fed burgers, or just eating as a digestive at every meal. Also, in the cheese case we have some amazing burrata that goes lovely with olive oil, cracked pepper, sliced prosciutto and crusty bread, as well as this amazing pecorino fresco that brings me back to spring in Italy, with its grassy notes and sweet smooth texture. The Normandy butter is also back in abundance along with the buffalo milk cream cheese that is to die for. For pre-mades, we have a chicken andoullie gumbo which serves nicely over rice and garnished with some slices spring onions. The other is a beef bolognese, a rich tomato based meat sauce that would go well with a variety of pastas we have here to offer at the shop. In the land of sausage this weekend, we will be featuring Breakfast, Bratwurst, Merguez, Mild Italian, Beef Chorizo, and we have a lovely Elk and Pork Crepinette (while supplies last). For our heritage pork, we will have every cut available: Chops, Shoulder, Belly, Sirloin, Tenderloin, Hocks, Trotters, and Ground. For lamb, much of the same; I received a fresh lamb on Friday, so you name it and we probably have it! Specialty beef cuts we will be featuring this weekend will include: Short Ribs, Bone in Rib Eye, Porter House, Filet, Marrow Bones, Tri Tip and Wagyu NY Strip, to name a few. Greetings, First things first, this Saturday we closed at 3:30pm as I am working with my good friend, and Top Chef contestant, Elizabeth Binder, at a private event in the Oakland hills. That being said, we will be ready and waiting your arrival with all things meaty and good! For you grass-fed lovers, we will have Sirloin, Bavette, Hanger, Filet, Stewing beef, Roasts, and ground beef (we are promoting our grass fed ground beef this weekend and lowering it to $7/lb; get it wh...ile it's hot!!) Grain finished selection will be a Bone-in Rib Eye, T-Bones, a few Porterhouse, Brisket, and some really special Wagyu Skirt Steak. In the land of the pig, we have Heritage Pork Shoulder, Chops, Ribs, and Belly. While mentioning pork, I might as well mention some of the sausage varieties available this weekend: Breakfast, Merguez, Roasted Pepper and Ancho Chili, Roman Beef Sausage, and Bratwurst, to name a few. The crepinette flavor of the week has yet to be determined. Plenty of our free range organic chicken will be on hand, as well as the organic cage free eggs. Happy Valentines Day! Hope you all made it out of Super Bowl / Mardi Gras weekend alive and are spending this weekend with someone near and dear to your heart. With all this spring-like weather, love is in the air and what better gift than some beautiful, prepared meats from our shop. For pre-made sauces this week, we are featuring the crowd-pleasing Sugo di Coniglio -- a braised rabbit with porcini, pancetta, rosemary, sage, tomato, white wine, and garlic -- excellent over... a wide noodle pasta with loads of grated parmesan. The other is our beef Bolognese; we have a wide array of different pastas to go with this dish, my favorite being trofie, a small twisted noodle that holds pasta sauces quite well. Our buyer was out of prosciutto this week but we have plenty of speck (smoked prosciutto), a few truffled raviolis, and an amazing ravioli filled with cannelini beans and kale. A few cheeses to mention for the holiday: a buffalo milk Camembert that is tangy, creamy, and down right delicious; Il Nocciolo, a small format cheese that has cakey, creamy, sweet attributes; and if you're looking for stinky, we have a great inexpensive Fiacco di Capra, which is a goat milk cheese that is aged slightly and rind-washed with wine. There will be loads of different beef, pork, lamb, and chicken cuts available. If you have something specific in mind, please let me know and I will set aside to assure a perfect holiday. Happy Holidays, Hope you are all finishing up your week in style and are ready for the upcoming holiday week. Here at the shop our holiday hours will be as follows: We will have regular hours until 12/24 which we will be open from 11-5, then closed until the following Tuesday 12/28....we will only be closing on 1/1/16 that week, then open again normal hours for the weekend from 11-5 on 1/2/16 and 1/3/16. Then we are closing until 1/12/16, I am going to spend sometime with ...my family in New Orleans. TO RECAP: Dec 24: 11-5pm Dec 25 - 28: CLOSED Dec 29 - 31: Normal Hours Jan 1 - New Years Day: CLOSED Jan 2 -3: 11-7 Jan 4 - 12: CLOSED This weekend at the shop, we have lots of beautiful cuts of pork,beef, lamb, and chicken. I still have some veal left; if you are interested, let me know and I will set some aside for you. I made some amazing wild boar and veal crepinettes that are sure to go fast. I will also be offering our bratwurst, breakfast sausage, and merguez. The cheese case is brimming with some beautiful cheeses. I received some more of the petite tominos that were such a popular hit last week (the cheese that is wrapped in prosciutto and baked, to die for). They say, the way to a loved one's heart is through food... don't forget, Gambrel & Co offers gift certificates --an easy gift that's sure to please.

This week at Gambrel & Co... We have a bevy of different meats in the shop right now; beef, pork, lamb, goat, chicken, ducks, rabbits, veal, and a little bit of venison. A range of different cuts will be available as well -- if you have a certain piece you would like from any of the animals, message or call and I will reserve them for you. For sausages this week, we will be providing breakfast, mild Italian, bratwurst, merguez, goat currywurst, and a crepinette of some conno...tation (yet to be determined). I also have a load of beautiful cheeses for your tables. We are featuring a really nice petite brie, a beautiful Camembert, Salmetto Cremosa (a gorgeous roboilo that is silky smooth with a slight bitter bite), and this small little cheese, Langherino, falling in the Tomino category. These cheeses are typically served warm (baked at 175 degree for 4-5 minutes on plate you intend to serve it on) accompanied by crusty bread. If you want to go one step further, you can wrap in prosciutto before baking (featured below). For pre-made sauces this week, we have a chicken consomme containing beets, their greens, chard, and purple potato; great with a small noodle and grated parmesan. The other is our signature Bolognese. I have tons of fresh pastas to accompany, if you are interested. As always, eat happy!
