These colors come from 20 days of skin contact fermentation. The body is intense, with hints of yellow fruit in syrup, dried fruit, honey, and herbs. It is warm and full, smooth and well-structured, with mineral and spicy. Fermentation occurs with natural yeasts, in open oak vats. . Aging takes place for 12 months in large Slavonian... oak barrels, 11 months in steel tanks, and 12 months in bottles. No sulfites are added! Specogna's ProFondo is made with 100% Glera (the prosecco grape) but it is left unfiltered made with a ‘Long’ Charmat method, fermentation in autoclaves. ... Our last harvest this year: joining the biodynamic winery Visintini to close of the 2020 season. This land has been in the Visintini family since 1884, they began winemaking around 1915, and today it is still a family-run project.
