Our Sourdough Boules are delivered to the Original Pantry Restaurant in Downtown Los Angeles 7 days a week. They slice the bread there, toast it, and serve it at the table as pictured. This bread is made with a sourdough culture (no bakers yeast). There are NO preservatives, conditioners, or artificial flavors. It takes us 2 days to make this bread because we need a long time to allow the dough to naturally rise. Stimulated by the sourdough culture and the wild yeast natu...rally drawn to it in the air around us, we allow it to slowly proof before we bake it. Our 1.5 lb. Sourdough Round (Boule). Served at The Original Pantry in Downtown Los Angeles. This loaf is made the old fashioned way (no yeast, a sourdough culture/starter, proofed slowly). It takes us almost 2 days to make this bread because of the old school proofing time. We don't add preservatives or conditioners, so it only contains the simplest of ingredients (flour, water, salt, oil). Instead of Bakers Yeast we use a sourdough culture (sponge), which causes the bread to rise slowly and naturally, drawing on the wild yeast that naturally occurs in the air around us. This process breaks down the proteins and carbohydrates so that the bread is easier for our bodies to digest. It also releases the nutrients f...rom the wheat for our bodies to absorb. There are many who believe that gluten is not the real villian, but rather it is the modern baking method that our culture has employed to produce bread more quickly.
