THE WAY something like a pizza oven starts to patina can tell you so much about it’s life.This oven is just 1 1/2 years old. It really is just beginning it’s journey in this kitchen and showing it’s color so. It’s color is that it grinds. It’s grinds along with it’s pizzaiolo almost everyday, from before we open til after we close. It makes pizza, bread, stocks, desserts and more. And in the year and a half that we’ve sweated with this machine, could you believe this color marks roughly 50,000 pizzas it’s already baked? Fifty-freakin-thousand!!! We rely on this oven and so for that we relish it’s patina every single time we look at it.
