Hey Flexfam! We are SO excited to start offering indoor classes again! Starting Monday 10/26 we will start to offer one studio class per day during our soft opening, and slowly ramp up from there! #mealprepmonday tonight is a batch of pumpkin chicken chili over roasted new potatoes and a side of sautéed French beans tossed with lemon, truffle oil, and porcini mushroom powder. Try it and see what you think! Pumpkin Chicken Chili Splits into 5 meal prep containers ... Ingredients: 1 lb boneless skinless chicken breast, cubed in 2" cubes 1/2 can pumpkin 2 bell peppers of your color choice, diced 1/2 an onion, diced 3/4 cup chicken stock 4 cloves garlic, minced 2 tbs olive oil 1 tsp cumin 1.5 tsp chili powder 2 tsp paprika Salt/pepper to taste Heat olive oil in sauté pan over medium heat, then add garlic, onion, and bell peppers. Cook until softened, then add pumpkin and chicken stock and stir to combine. Add chicken and spices, stir, and cover. Turn heat down to low and simmer until chicken is tender. Take off heat and shred chicken with two forks. Super easy, and takes about 30-35 minutes from prep to plate!

Prepping your meals is one way to plan for success: one very common diet mishap is being caught hungry. Having clean, healthy meals on hand that taste good is critical to the success of any nutrition plan! Top row is green beans, chicken, and wild rice blend. Bottom row is ground turkey with bell peppers and tomatoes, asparagus, and wild rice with lentils. (We even found Flex...-colored meal-prep containers!!! ) Snacks include protein shakes, an apple and some peanut butter, or a serving of cottage cheese. Share your favorite healthy snacks! What is your go-to? We'll learn all about nutrition for strength-building during our five-week Intro to Strength Training workshop coming in October! Details coming soon.
