Banana-Oat Protein Muffins. Gluten free, sugar free, dairy free. . . Ingredients: 3 ripe bananas puréed in blender or food processor (I used my nutribullet).... 1 cup almond milk 1 egg 2 tsp. vanilla extract 1 1/2 cup gluten free oats 1 scoop protein powder (I used vanilla). 1 tsp cinnamon 1/2 tsp baking powder 1/2 tsp baking soda Directions: Heat oven to 350. Add wet ingredients, then add dry ingredients and mix. Allow mixture to sit for about 15 minutes to thicken. Evenly divide mixture into 12 muffin cups and bake for 25-30 mins. Best served warm, topped with a nut butter of your choice. Enjoy! See more

Winter grain vegetarian bowl with balsamic dressing. This was super easy to throw together and so versatile that you can add lots of different varieties of grains, veggies or nuts! Here’s what I added: Super greens salad mixture Sweet potatoes (cubed, baked and cooled)... Baby beets (I bought these already cooked in the cold section for an easy addition, just have to dice!) Pistachios Goat cheese (so creamy and mild, try it!) Wild rice mixture, cooked and cooled (I made this in my instant pot with vegetable broth). . Balsamic dressing: 1/4 cup balsamic vinegar 1 cup olive oil 2 tablespoons mayonnaise (optional but deliciously creamy) 1 teaspoon salt 2 teaspoons Dijon mustard

Breakfast meal prep! Chicken Hashbrown Patties with Basil Pesto. I really prefer a savory breakfast over a sweet one. These are perfect for a grab and go, quick breakfast choice throughout my week. I topped mine with a basil pesto but they are also great with your favorite salsa! For one patty it’s approximately 111 calories, 11g protein, 4g carbs, 6g fat. Ingredients: 2lbs ground chicken ... 2 medium white sweet potatoes, shredded 2 eggs 1 small white or yellow onion, shredded. Seasoning of your choice, I chose garlic powder, onion powder, dried thyme, salt and pepper. Directions: peel potatoes and shred them in food processor, as well as the onion. Combine all ingredients in a bowl and mix well. Use 1/2 cup measuring cup to scoop batter out and form into a patty shape. I used my air fryer and air fried these at 375 for about 10 minutes or until the center reaches 165 degrees. I’m sure you could bake these as well if you don’t own an air fryer.
