The artform of hoshigaki - ardently peeling, air-drying, and individually hand-massaging Hachiya #persimmons, either every day or every few days, over three to five weeks - dates back hundreds of years and is still practices regularly in Japan today. An article from Bon Appétit Magazine from editor @sarahjamepl rev...ealed some up-and-coming spots in the U.S. are showcasing the art form as well. San Francisco's now closed Bar Tartine once hung hoshigaki in its restaurant Chef Greg Proechel of Ferris in New York is going to uses his house-made dried persimmons in crudo.
