Fig + Moon Patisserie

Raining off and on here in Minnesota calls for a change up for this Mexican Monday. Made some chicken and butternut squash risotto and added sauté mushrooms on top. I use Tyler Florence's ultimate recipe as a base and just add or subtract from there. So yummy I'm the tummmy!!! Full and hearty! I cooked the brats in some beer (Rainy Daze) from @ltdbrewing And the pumpkin beer is rimmed with a little cinnamon sugar to give it that extra kick! Happy Mexican Monday!! Today I made pinto beans, Mexican rice, and enchiladas!! I stuffed the enchiladas with potatoes, carrots, olives, cheese and left over carnitas. My Grammys used to make hers with the potato carrot and olives and there were always so delicious! I made this totally thinking of her hoping I would do her proud with my version.
