From sundown to sunrise, our harvest crews have been resilient in their ability to hand-pick all the grapes for our Evan’s Ranch Wines. It’s not a glamorous job, but our harvest crews show up night after night and don’t stop until the job is done. Fermentation is a process that dates back over 10,000+ years ago. The frothing is a result of the carbon dioxide gas evolving. We ferment our Pinot Noir and Syrah in small, open-top tanks with daily punch downs. The winery is incredibly busy & fragrant this time of year! Nothing like a cool, foggy morning to process fruit! Phase of harvest is well underway and the winery is buzzing with grapes at different stages of fermentation. Soon, all of our 2020 vintage will be put to rest in barrels. Our team not only hand-harvests everything, but we also sort the fruit by hand before it's dropped into our de-stemming machine. From there, the most perfect grapes fall into their vessel to begin the fermentation process.

Our wines are made from 100% hand-harvested grapes in the Sta. Rita Hills AVA. The miracle of this region’s microclimate began about 20 million years ago during the Miocene Epoch, as marine sediment was deposited deep under the Pacific Ocean. Due to tectonic plate movements, mountains rose out of the ocean in a north-south orientation. Over a timespan of twelve million years, the mountains broke from the plate and turned clockwise, creating the most clearly delineated tr...ansverse range, from Alaska to Chile, on the Pacific Coast. Fall is here, it's #WineWednesday, and here is a close up shot of a Chardonnay cluster that is being sampled. Before we harvest our fruit, we take samples from different blocks in the vineyard back to the laboratory. There, we measure things like the brix (sugar) levels, pH, TA, and we are ultimately looking for certain levels to indicate the perfect ripeness. That's how we determine when we pick our grapes!
