Good Day! When my late Tita Edna opened the store in 1991 on the Westside of Long Beach, she simply called her new business, "Edna's Restaurant". But simplici...ty seems to end at the naming phase. As many of my fellow chefs, restauranteurs, culinary industry associates, etc.. can relate, there's a lot of unknowns in opening a restaurant and aside from the financial investment, the physical and mental stress that comes with It can easily take a toll on anyone. But my family is resilient. And resiliency is something important that I learned from my Tita Edna. In the 90s, I think the restaurant closed one day out of the whole decade. And that one day was for my grandma's funeral in 1998. UPDATE: Not once has the restaurant closed since it opened in the 90s. In 2000s, we overcame a building fire and worked from home, 9/11, the passings of my uncle in 2002, my beloved Tita Edna in 2004, the cooks and chefs that's been with us since opening, and more recently, the passing of my Tito Reynaldo Austria in 2018. The restaurant have weathered tumultuous times. And throughout that time, our loyal guests have continued to support us. They have been the most generous individuals. The most caring families that became part of ours through the years. The different organizations and events that have welcomed us to their banquet rooms year after year. The sense of community for the Westside is heartwarming. In Tagalog, the sense of BAYANIHAN Fast forward to this month and we find ourselves in times of uncertainty. For almost 30 years that the business has operated, nothing has shaken me to my core as this pandemic takes its hold. My family is doing okay and they're very hopeful that things will get better soon. I was supposed to see them this week to celebrate my mom's 60th birthday but cancelled out of caution. I miss my family. But I know it's for the best. But today, I'm reminded that resiliency is within me and just like how it flows through my family blood, we will get through this together. With the situation with the virus being fluid, we are following rules and regulations from the local and state government.
